Awesome train ride for your family. I’m originally from Long Island NY (born), then lived in NJ and then later relocated to Albuquerque New Mexico in 2011. I used Amtrak from NYC to Chicago then transferred to Southwest Chief down to Albuquerque. Been living here 12 years. Amtrak is the way to go!!! Congratulations
We were able to sit together as the train was at 80% full. It felt there to be more passengers after certain stops. The ride was comfortable for being we had coach seats.
I take a cooler to bring food and save some money. The easiest thing to bring is stuff to make sandwiches. I also like to bring cup noodles and get hot water at the café so we get some cheap comforting hot food. Water bottles with filters are really good to refill them at the café and not have to carry too much to drink. Powdered drink mixes good too.

I wanna do this with my boys I hope they can enjoy it . gotta wait till they get older
It is definitely worth the experience even if it is just a short trip. We will likely do it again.
