@1:20 That's not true. There is a pool of fresh water in the center of Caelid. Just head directly Northeast from Church of the Plague site of grace (where you first meet Millicent) about 500 feet to find a pool of fresh water with a Land Octopus and its babies.
I got to ask how did these massive underground caves and lakes form in the first place personally I think the roots of the Erdtree siphon water from the ocean to hydrate the erdtree and the excess water are what creates a lot of the rivers and waterfalls in the lands between
On DLC rivers, those rivers were probably formed from when Shadow Lands wasn't separated from the Lands Between. Would be interesting to speculate their sources before it was removed!

Caelid has water in Dragonbarrow akshully with some mini wyverns chilling in it. If not counting the giant ass rot lake.

A very small pool, but likely fed by whatever left the large pool in Dragonbarrow as well. The one with the two wyverns near the map fragment
