  • There are so much uses for mint, did you know that mint has long been used to soothe upset stomach and it is also mildly antiviral and antifungal. It’s good for coughs and colds and can have a calming effect on the nerves which is why I use them fresh or dried for teas and in cooking.

    Meatballs
    1 lb ground beef,
    1/4 cup mint finely chopped
    1/4 cup onion diced
    3 cloves minced garlic
    1/2 cup or handful of washed & dried rice
    2-3 hearty pinches of salt,
    few pinches each of
    cumin, Mexican oregano, black pepper, salt, garlic powder & onion powder is optional since you have minced .
    For the soup pot
    4 cups of beef broth
    2-3 tomatoes
    2 garlic cloves
    3/4 cup onion for tomato blend
    (You can also use some tomato paste if needed for color/ flavor)
    1/2 cup finely diced onion
    2 chopped carrots
    2 chopped potatoes
    1-2 chopped jalapeño or any chili pepper you like
    1/2 tsp-1 tsp of the following:
    cumin, coriander, oregano, garlic
    dry mint works great here as it helps build the flavor of the soup but basic Salt and pepper is fine.
    Optional veggies:
    Celery
    Zucchini or Mexican squash
    Corn on the cob
    Instructions:
    combine 1 lb ground beef, small bunch of mint finely chopped, 1/4 onion diced, 3 cloves minced garlic, 1/4 cup or handful of dry rice, 2-3 hearty pinches of salt, few pinches each of cumin, oregano, black pepper, garlic powder optional since you have minced . No need for eggs, the rice is the binder. Mix and make meatballs, set aside
    In your soup pot, sauté 1/2 cup finely diced onion in lard, oil, or whatever you want for 3 mins. Add in 2 chopped carrots, 2 chopped potatoes and season with 1/2 tsp to 1 tsp of cumin, coriander, Mexican oregano, salt dry mint work great here and it helps build the flavor of the soup but basic salt and pepper is fine. Saute in pan for 4 more mins.
    Meanwhile in a blender toss in the tomatoes, 1/4 onion, 2 cloves garlic, and 1-2 chopped hot pepper a little of the boiling water, and optional more seasoning and blend.
    Back to the soup pot - add in about 4 cups of beef stock ( I used chicken) and the tomato liquid- stir and simmer for 2 mins. Finally add the meatballs, 1 chopped zucchini, celery, Corn is fine too (add veg here so they dont get super mushy). Optional more chopped mint and/or handful of chopped cilantro. Top off the pot with a little more water or stock and simmer for 15-20 mins under medium heat until the meatball is cooked through.
    Taste & season, top off your bowl with cilantro, mint or lime. Can be eaten alone, with tortillas or even bread!
