    What Mr Roel did there, he did well. Might we get a sneak peek at the chili oil you favor soo much?

    I don't think you could go wrong having a wood chip smoker box going on the grill during that portion of the cook.

    Don't go down there yet! I hear that all the time. If you take your time it has way more flavor and is very juicy 😋

    Okay, this is misleading, those aren’t ribs. That’s a frenched pork loin roast. Other than that, interesting method of cooking.

      I have to agree. And, while it looks fantastic, I don’t typically have the time or the patience to pull something like this off. LOL.

    If you start with Berkshire Pork it will be much better.

      Berkshire vs iberico?

    • @HeyMichaelLeo
      @HeyMichaelLeo 4 дні тому

      @FixableHQ Different, however similar without all the curing.

      Buy some kidney fat from your butcher cube it up and render it down it's not hard but takes a long time, and the tallow can be filtered and reused.

      @@mikemiller209 Easiest to render it out while you're cooking a brisket or smoking something else.

      I get fat trimmings from my local butcher for free (saves him on his disposal costs) and render them down. I do it outside in a slow cooker because it can be stinky. Tallow and lard.

    I’m not too crazy about the chili oil. I probably would’ve done something with the honey and maybe sweet soy sauce and add some salt to it. That’s a sauce I would make but otherwise that’s a great recipe. I’m just not into spicy foods….
