Hokkaido Baked Cheese Tarts

- These delicious cheese tarts originated in Japan. It has a crunchy short crust for the base and a cheese filling. It is difficult to replicate the original version because of the type of cream and cheese that Japan has that we do not have. My version is not sweet. You can add more sugar if you wish to.

Yum! Chef can we add pureed fruit filling (DLA blueberry or cherry or strawberry) to the cream cheese mixture when we are cooking it?
Yes you can but you need to adjust the sugar and the thickener otherwise it would be too sweet and watery.
Chef, can we use the filling as substitute for pastry cream to make a fresh fruit tart and then just top with strawbery, kiwi, and other fruits?
Yes you can but it will taste more like a cheesecake than a pastry cream.

Use pastry flour if you have no cake flour. If you live in the Philippines, you can't find pastry flour.

You try to find pastry flour there or use a low-gluten flour. If you can not find cake flour or pastry flour, try this - for every cup of all purpose flour, remove 2 tbsp. and replace with 2 tbsp. cornstarch. It is not the same as cake flour but it works in most cases. Good luck!

No you can't
Is there any substitute po for Almond flour?
You can replace with cake flour.
