AIR FRYER FEBRUARY MENNONITE MASHED POTATO ROLLS

Recipe as follows in book :
1 cup mashed potatoes
1 cup sugar
1 tsp salt
1/2 cup melted Lard
3 eggs beaten
1 pkg yeast
1 cup lukewarm water
6 cups bread flour (or more)
**Soak yeast in water. Mix all ingredients: put in greased dishpan overnight. Should rise 1/4 or almost full. Cut into quarters. Knead one quarter a little. Roll (not too much) nice and thick. Cut with a tumbler. Put on cookie sheet. Let rise another time as high.
Bake at 350 for 12-15 minutes. Brush with butter. Yield: 3 dozen. **
