Japanese Curry with Fried Steak

  • Winter warmer - hot, savory and oh, so comforting!
    ------------------------------
    Serves 4
    Ingredients:
    1 x tbsp Vegetable Oil (for the curry)
    1/2 x Cup Vegetable Oil (for frying)
    1 x Onion
    2 x Carrots
    3 x Potatoes
    1 x pckt Japanese Curry Roux
    2 x Cups Water
    1 x Cup Plain Flour
    3 x Eggs
    2 x Cups Panko Crumbs
    4 x Nice Steaks
    Salt
    Pepper
    White Rice to Serve
    Method:
    1. Roughly chop all vegetables and put in a large pot with 1x tbsp of vege oil.
    2. Place over a high heat and cook until steaming. Add water, bring to a boil then cover and simmer until veggies are soft.
    3. Add the curry roux and stir until fully combined. Depending on your preference, you can add more water or a less-thick curry
    4. Season the steaks, then put salt, pepper and flour together, covering the steaks evenly
    5. Whisk the eggs, then coat the floured steaks
    6. Coat evenly in panko, then place immediately into the hot vege oil in a large fry pan.
    7. Fry steaks until golden brown, and leave to rest.
    8. Slice the steak, then place over hot white rice and pour over a ladel of the curry and veggies
    9. Serve immediately!
    Personal note: My curry was quite thick in this, I should have had more water in the pot.
