I take it a step more... I cool the cooked pork overnight in the fridge and then remove all the fat (there's a lot). I sautee a Vidalia onion and add the pork to the onion pan and bring it all back to temp.

I like the addition of that ball valve intake. I was thinking about adding one to my Pitmake vault. I typically preheat with a torch. Do you feel I can skip that step adding the extra intake? I bet it takes 1.5 hours to finally get up to temp without a preheat.
Appreciate the comment Jeffrey. The one thing i notice with the extra ball valve was in addition to increasing the temp faster it also burned through the full faster as well. I need to find the sweet spot in order to improve efficiency and get longer cook time with my fuel source. With one ball valve in would normally take me 45 minutes for it to get to temp. With the second ball valve added i was able to get to 275 in about 30 minutes but i did burn through the fuel faster. Thanks again for watching and commenting.

I can't wait to get my Sexy Chicken. You should see an order for NC. How about some seasoning catered to the no sugar community/diabetic friendly folks. I see most of yours have 1 carb but no carbs would be great! I ordered the sexy chicken do to no sugar listed.
Question about layering rubs: I’ve been making my own for a while now, and I typically just use one and then let it set. I’ve seen a lot of videos where an A.P. rub is applied first, and then another on top. I know pork shoulders can take a lot of seasoning, but for smaller cuts like, say, spare ribs, might two different rubs with their own salt content make the meat too salty? Am I overthinking this?
Appreciate the question. if both rubs have salt in them it can make them salty. My JPAP is made with Kosher salt so it does not have that strong salt flavor, but you do want to be careful. My Sweet Heat has no Salt in it and perfect for layering on top of the JPAP. thanks again.

Yes it did. But I found that it burned the fuel faster. May have to tinker with it a bit to get it dial in for efficiency. Thanks again.
