      I like your method best. I prefer dark meat and not over cooked. Also, this way, we can save the Breast part for second and third freshly cooked meals.

      Thanksgiving went very well. You deserve some credit, because the turkey was almost perfect, thanks to spatchcocking it using your method. If my turkey had been much bigger, I might have run into trouble with my small oven. As it was, I was able to fit it all in the oven with great results.

    Really appreciate that first method. It's way cleaner and it would make more sense to separate the halves, since they absolutely will cook at different rates! Thanks so much for sharing.

      so many videos and techniques spent trying to cook poultry so white and dark meat finishes same time....rendered absolutely obsolete with first method :) THANKS!

    Spatchcocking always seemed overly complicated until I saw this video. I used the first method on a small turkey on Thanksgiving and it worked great.
    This continues to be my favorite cooking youtube channel.

    Best tutorial for butterflying! The optional styles help for different sized fouls and when other parts are used for other recipes. I love it also when ordinary knives are sufficient for the job! Great video 👌

    I know that I am saying this too often, but I'm just enjoying another chicken that I cut up using your method. I had 2 small chickens that I cut up and put the legs on one sheet pan with small potatoes and the breasts on another. Everything was perfect. I had basically stopped buying chicken because it was a pain to cook it evenly. It's now very simple. Thanks again. Oh, your beef stew was delicious yesterday too.

    I have always spatchcocked a chicken the traditional way. After watching this video and the one where you smoked a chicken I think i'm a convert to the first method you used here. I must say that I learn so much from your videos. Thanks for keeping them coming, I enjoy each and every one of them.

    I used to use method #2, but I like to remove the keel bone by cutting around it and it will twist out. Now I use method 1 but still take the keel bone out.

    As others keep posting in comments I also came to this channel from the coca cola recipe video and subscribed after watching a few other videos. I'm surprised you don't have more subscribers, especially since you've been uploading for years from what I see, but it looks like you've been getting more subscribers now.     When i saw you cut the legs off I was like wait thats not spatchcocking but then saw the rest. I am actually really interested in the 1st demo where you seperated the legs from the breast. May have to try that one day.

    I am a fan of technique 2, and what I like it most is that in cut in almost half the cooking time compared to a whole bird.

    I'm sad that the original 1st method video of Dave Meli doing it was removed from your old channel Le Gormet tv. That series of videos were really great, like the supreme stuffing that is still there. These 1st method is my prefered one too,and I lerned here.

    Here in my country some do the reverse spatchcock they cut the half form the breast and leave the back bone

    One point to quibble on - you should remove the keel bones from those chickens so they lay as flat as possible. The picture at the end shows the keel bone has been removed, but that step was ignored/not shown in the video.
