How to Make Pumpkin Spice Hot Sauce

We visited Peter's Pumpkins and Carmen's Corn to get the heirloom Sugar Pie pumpkin we used to make this sauce.

Ingredient list:
Habanero or Superhot Peppers
(Orange or a combination of colors that together make orange)
Here's a list of peppers used in this batch of sauce:
7 Pot Brain Strain Yellow
7 Pot Chaguanas Yellow
7 Pot Orange Primo
7 Pot SR Strain
7 Pot White
Carolina Reaper
Dragon’s Breath Pepper
I Scream Scorpion
Orange Bhut Jolokia
Trinidad Scorpion Moruga Red
Trinidad Scorpion Yellow CARDI
Spices:
Cinnamon
Ginger
Nutmeg
Cloves
(or premixed pumpkin pie spice blend)
Salt
Pumpkin
Garlic
Apple cider vinegar
Olive oil
Pumpkin Spice Hot Sauce recipe
50 habanero or superhot peppers, stems removed, puréed or finely chopped
2 cups roasted pumpkin (use 1 1/2 pounds of skin-on, raw pumpkin)
4 cloves garlic, minced
4 tablespoons olive oil + a little to smear on the pumpkin for roasting
2-3 cups apple cider vinegar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
or
(or use 3 teaspoons of a Pumpkin Pie Spice blend. We used Penzeys)
1/4 teaspoon salt
Preheat oven to 350 degrees.
Wash pumpkin thoroughly. Cut pumpkin in half and scrape out seeds. Score the pumpkin with your knife and smear with olive oil.
Place cut side down on a sheet pan. You can use baking parchment for easy clean-up. Roast until very soft, about 45 to 50 minutes.
Scoop roasted pumpkin out of skin.
Sauté garlic and spices in oil until soft; add the pumpkin with a small amount of water if needed. Bring to a boil, reduce heat and simmer for about 5 minutes. Spoon the garlic pumpkin mixture and raw chilies into a blender with 2 cups vinegar and puree until smooth.You may need to split this into two batches if your blender jar is not large enough. After blending, check the consistency and add more vinegar if necessary. We used 3 cups of vinegar total. Simmer on the stove on low to medium heat for 10-15 minutes and seal in sterilized bottles. Yields about 10 5 oz. bottles of sauce.

As much as I loved the song, I think your comment about regretting handling super hot peppers with bare hands was my personal favorite. From experience, it's a bad idea. I have respect for peppers after burning eyes, lungs, skin, and other parts. Pumpkin Spice looks delicious, what a great idea!

Great video that I am glad has just appeared under my current settings, I guess. The song and the caricature is very enjoyable and realistic. I made this today I was a bit disappointed at first. I thought it tasted a bit to sweet and a bit to vinegary but after I'd put it in jars and let it cool and settle I tried it again with a sandwich and its really nice.

Rob! Your videos just make me smile. Thank you for the work you put into them. Question for you on this sauce. With a yield of so many bottles, how long do you estimate that it will keep? Do you refrigerate it after you bottle it?
Hi Jason! Thanks for your kind words. We don't get to keep many bottles, because family and friends are always asking for them! The high pH of peppers and vinegar means they keep for a long time. We don't refrigerate them until after opening. I know they keep for a year or more at room temp before opening, and for several years in the fridge after opening. I have neighbors that don't eat them very fast, and I have tried sauce as old as 8 years and it was still good.

This is really great! Pumpkin can replace carrots for consistency. You could make a milder pumpkin spice sauce with Numex Pumpkin Spice peppers. I just happen to have about 5 lbs of them right now...just in time for a fall season sauce! Thank you for sharing your recipe.

We had a frost warning for last night, but the temps didn't drop low enough for frost. Looking at the forecast, I think we're good for at least another week. I'm glad, because I wasn't ready for frost in September. 🌶❄️
I know the jars were sterilized prior to bottling, but was the pH low enough to be shelf stable? Did it require refrigeration after opening?
I harvested close to 200 pounds of pie pumpkins yesterday and have tons of peppers. I can’t wait to ty it!
I now have a pH tester, but didn't when I made this video. But this recipe is similar to my carrot-based sauce I've made for years which is very shelf stable. I had some of the pumpkin spice bottles for several months unopened and unrefrigerated and they were fine when opened and consumed. I always refrigerate after opening. I hope you like it!

You mentioned that while using funnels, you keep knocking em off. A cool trick I learnt in kitchens is taking a small bucket, or container or a jug or jar and see how many bottles you can fit snugly in there. once the bottles are steady against each other, use the funnel to quickly fill up the bottles. take out the bottles, cap em, rinse repeat. Hope that helps. Oh just to give an idea, like a 500gm yogurt bucket that will maybe hold 3 of these bottles.
