Just made this and it was exceptionally good. WE've just moved to Thailand, so I was able to get all fresh ingredients, including some vegetarian Thai chilli paste. I did use a teaspoon of coconut sugar in there as well, which really made an extraordinary difference in blending the sour notes with the chilli, making it very rounded and balanced. Absolutely beautiful recipe.
Just made it again, having found some vegan fish sauce, which took it to another level!! Also, used some of the Thai radish which really adds something special.

The citrus squirts in your eye because you have the citrus halves the wrong way in the juicer! When I found that out, game changer! You won’t have to squeeze it by hand once you’re done either 😊🤗
I always do. Some cooks and chefs say to just wipe them with a wet paper towel but I still find some mushrooms out of the box sandy or dirty. But, I only wash them and quickly right before I use them! Thank you for subscribing. Enjoy!
They are usually sold at Asian grocery stores in the fresh produce refrigerated section. They can also possibly be in the frozen section. I believe they can also be found dried online. They aren't an ABSOLUTE must but for the best resulting fresh Tom Yum soup, you will want to find these leaves. They have such a distinctively FRESH limey fragrance , which is similar to limes but not acidic. It's hard to explain, but if you do find them fresh, you'll know what I mean. When I am cooking with them, I can't stop smelling them!
