  • Ingredients:
    Fishes (cleaned, fins and tails removed)
    Mustard seeds
    Cumin seeds
    3-4 dried red chilies
    Szechuan peppercorns
    Fresh coriander (a handful, chopped)
    Turmeric powder
    Salt (adjust to taste)
    Chili powder
    Coriander powder
    Cooking oil
    Juice of one lemon
    Instructions:
    Wash the fish, cut the fins and tails, and make cuts on the flesh. Set aside.
    Heat a pan and add mustard seeds, cumin seeds, and dried red chilies. Roast until fragrant.
    Transfer the roasted seeds and chilies to a stone grinder and grind them. Add Szechuan peppercorns and continue grinding.
    In a bowl, combine fresh coriander, turmeric powder, salt, red chili powder, coriander powder, the grinded mixture, oil, and lemon juice. Mix well to form a marinade.
    Marinate the fish with the mixture, ensuring it's well-coated. Allow it to marinate for a minimum of 2 hours.
    After marinating, heat a pan, add oil, and place the fish in the pan. Cook each side for 3-4 minutes over medium heat.
    Serve the pan-grilled fish hot, garnished with additional fresh coriander if desired. Enjoy 😉
