    Grocery List:
    32 oz Oatmeal
    1/2 gallon Milk
    1 lb cheese
    16 oz sour cream
    2 onions
    2 tomatoes
    1 head lettuce
    5 lb potatoes
    32 oz broccoli
    Rotisserie chicken
    2 lbs Ground turkey, chicken, or beef
    1 pkg hot dogs
    1 can green beans
    5 lb rice
    16 oz pasta
    2 lb black beans
    2 cans corn
    2 cans crushed tomatoes
    Recipes:
    Soft Sourdough Bread
    1 C sourdough starter
    3 C ap flour
    1/4 C dry milk
    2 TBS sugar
    2 tsp salt
    2 TBS butter or coconut oil
    1/2 C water
    1 egg
    Combine all ingredients into non-metal bowl. Allow 20 minutes rest. Knead by hand or stand mixer until smooth and elastic. Rise 4 hours.
    Shape and allow to rise 2 hours. Bake at 350 F 40 minutes (20 for buns) or until golden ground.
    Chicken Enchilada Casserole
    1 C chicken, cooked and diced
    2 C rice, cooked
    1/2 onion, chopped
    1 Recipe enchilada sauce (see below)
    1 C shredded cheese
    Combine chicken, rice, sauce, and onion and mix well.
    Place in 9x13 pan. Top with cheese.
    Bake at 350F for 30 minutes.
    Enchilada Sauce
    2 TBS olive oil
    2 TBS flour
    1/4 C chili powder
    2 C chicken stock
    salt to taste
    Heat oil in saucepan over medium-high heat. Add flour and cook for 1 minute, whisking constantly. Add chili powder and salt and cook 1 more minute, whisking constantly. Gradually pour stock, whisking to combine. Continue cooking until it reaches a simmer. Reduce to medium-low heat for 10-15 minutes.
    Sausage & Corn Chowder
    1 lb ground sausage
    1 onion, chopped
    6 medium potatoes, chopped
    1 can corn
    5 C whole milk
    Salt
    Cook sausage and onion until crumbly and drain.
    Place all ingredients in crock pot.
    Cook on high 4-5 hours, low for 6-7 hours.
    If chowder is thin, mash some potatoes to thicken (alternately you can thicken with corn starch slurry or instant mashed potatoes).
    Season with salt and pepper to taste.
    Can serve topped with sour cream or cheese.
    Broccoli & Rice Casserole
    2 cups cooked chicken, diced
    2 cups cooked rice (white or brown)
    1 pkg broccoli florets, steamed until tender
    1 cup shredded cheddar cheese
    1 recipe cream soup (see below)
    1/2 cup milk
    1/2 teaspoon garlic powder
    Salt and pepper to taste
    Preheat oven to 350°F . Prepare a 9x13 inch baking dish.
    In a large mixing bowl, combine the cooked chicken, cooked rice, steamed broccoli, and shredded cheddar cheese, cream soup, milk, garlic powder, salt, and pepper until well combined.
    Transfer the mixture into the prepared baking dish, spreading it out evenly. If desired, add additional shredded cheese on top.
    Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
    Spaghetti
    1 lb ground pork
    1/2 onion, chopped
    1 lg. can crushed tomatoes
    2 TBS sugar
    2 TBS olive oil
    2 TBS Italian seasoning
    1 pkg spaghetti, cooked
    Cook pork, 1 TBS Italian seasoning, and onion in pan until crumbly. Drain if needed.
    Add tomatoes, sugar, oil, Italian seasoning and cook for 10 minutes.
    Serve with noodles.
    Taco Soup
    1 lb ground chicken
    1/2 onion, chopped
    1 tsp cumin
    1 TBS chili powder
    1 tsp salt
    1 tsp dill
    2 lg cans crushed tomatoes
    1 can corn
    2 C black beans, prepared
    Brown ground chicken and onion in skillet.
    Pour into a crock pot. Add all other ingredients.
    Cook on high 4 hours.

    Your channel is such a refreshing contrast to so many that would never admit to a moment of doubt or uncertainty. At times we all feel like you just don’t want to make hot dog buns, but you soldiered on and got great results! This is just the encouragement I need on certain days.     I enjoy watching your videos. I am a widow of several years. 3 years ago, I was able to shop with a budget of $100.00 for the month, and that included household items. Lol. Things are harder now. Watching your videos keeps me on track and to remember what is a need versus a want. I do bake from scratch a dessert once a week or one that will carry over. Keep the videos coming. I do shop online at Wal-Mart to keep myself from going over budget. Thank you.

      This is why we need to vote that’s going to benefit OUR country. USA 🇺🇸 seems this administration is destroying our country and giving everyone else out money we work hard for. Seems Mr Build back better either didn’t get the permit or he meant any country but the beautiful 🇺🇸🇺🇸🇺🇸

    Bless your heart! We have all been there, when you don't feel like making something that you had planned. So, you could make those quick easy 30 minute dinner rolls, and use them for hot dog buns. I just cut the wieners in half and have a hot dog sandwich, or shape the rolls long. Also, I have made quick flour tortillas that take 5-10 minutes, and use a skillet. Roll the wieners up with your toppings. You can make a super quick chaffle (cheese waffle), but it will be a bit more expensive. If you are in a time crunch, or don't feel great, it would be worth it. You can easily find these recipes online. The chaffle is a keto recipe, and I use an egg and a handful of cheese to make two of them in a mini waffle maker. I add spices and/or chopped onions sometimes. They cook up fast, are VERY filling, and delicious! We use them for hamburger buns, and it is like an onion roll, only crunchy. Great job!     You could have made pigs in a blanket for the hot dogs. Just cut the hot dogs in half and wrap biscuit dough around them and bake. They are delicious and so easy to make! You can use Bisquick. I use a homemade version of that. I just make the biscuit as usual. Sometimes I add a bit of cheddar. I agree, I think this was your best low budget plan yet! Congratulations on making it to 20K!

    Love your channel. One of my personal budget tips is using my slow cooker to batch cook protein. If your viewers can't get a cheap rotisserie chicken, cooking a whole chicken in the slow cooker is easy, forgiving, and budget friendly in terms of energy costs. I buy "family size" trays of protein on sale (chicken drumsticks, thighs, or leg quarters are great picks) and cook them with very little seasoning in my slow cooker to get multiple meals over a week. The same can be done with ground meat.

    Great recipes. If budget allows add in popcorn, saltines, peanut butter and apples for snacks. Still comes in under $60 for a whole week of meals plus snacks. I love those Costco chickens. I’ve used them in a similar fashion making several meals with one $5 chicken. Luckily an Aldi will be coming to my town soon but in the meantime I shop mostly at Winco for the best grocery prices.

    Making bread is awesome. I have used bread like that, used slices of it to make garlic bread. In a skillet i add a little olive oil, a little butter, add garlic powder and Italian seasoning, and a pinch of salt. Heat to melt the butter, dip the slices or brish them with this mixture and bake in oven. My husband thought it was amazing.
    I buy the rotisserie chickens and do the same as you. I will be making chicken noodle soup today with carrots, celery, green peas, onions, and egg noodles. I add garlic and turmeric to my chicken bones and cook them in the crockpot with a splash of apple cider vinegar to the crockpot. What is not used goes in the freezer for later.
    I want to branch out into more freezer meals for summertime. Like crock pot meals to stop using the oven.

      I know me too. Many days I have that attitude of why didn’t I just buy this because I don’t want to make it from scratch!! So if I don’t make it then I have to completely change up the menu and sometimes that is even more work to do(mentally). 🤷🏻‍♀️🤣

    Congrats! I followed and subscribed on both. I hope the new addition to the family is doing well after being warmed up.
    Also I wanted to suggest for people making hotdog buns. I have had success making some basic ones with just flour, yeast, water, and salt. I just make sure my dough is a bit stickier when it rises. I find that gives a softer bread.

We love homemade enchilada's they're so good, filling and affordable. We use black beans, red and orange peppers, small can of green chilis, onions and a bit of plant-based cheese on top.     Hello Lori, I had a sourdough starter but During the holidays I was so busy I forgot to feed my sourdough and killed it. But now I have went gluten free for the most part except hot dog buns we eat chili cheese dogs once or twice a month and I make an exception on that day and allow 1 bun. An amish white bread recipe would work great for hot dog bun but I would go buy the hot dog buns. Your hot dog buns turned out awesome. I think this meal plan is very doable. For me When I have been meal planning I make have the meals either easy or something that you throw in the crockpot to make it fast and the other meals can be a little more labor intensive. And as for the rotisserie chicken keep singing the praises of the chicken its the best deal in town. I buy a couple every time I go to costco or sams and I pick the meat off and freeze it in portions for meals it makes it easy when you need to make a quick casserole or meal.     Oh I love the Aldi German brand Deutche Kuche Knackwurst. Delicious big dogs for $2.99 pack. One is very filling. Give this brand a try. Also I have cut up and lightly browned to season beans or cabbage. Yummy. Have you ever added a little water when you cook ground meat? or to bacon? Makes it tender and prevents burning. Meals looked delicious.

I have to admit that it doesn’t matter how healthy we eat, hot dogs will always be in my freezer and we eat them at least once a month. 🤷🏻‍♀️ Operation eat down the freezer’s has begun in preparation for our move the end of May and I don’t plan to buy any meat except for some pork chops so we won’t have as much frozen food to transport 1500 miles. I am working on eating down a lot of the non perishables also but not concerned about packing those to move. When we went to the discount store I was very careful not to buy for months ahead like I normally do, except for the 64lb box of whole chickens I got for only $15!! There were 10 chickens in it and so they will be used up before the end of May eating one each week. I also got drumsticks for $0.59/lb that day and plan to fry them up for the week of our county fair since my daughter and I camp out there all that week and we need easy food to eat since we are busy all day every day.
    Perfection is not the goal, full bellies are the goal.

    My mom used to make Corn Chowder using 1-2 cans whole kernel Corn, 1 can Cream Corn, Onion, Potatos, Whole Milk, Butter, Salt and Pepper and it was delicious !
    I love watching budget meal videos.
