She would ask me what kind of frittata I wanted and I always said "mushrooms and cheese"! And it was delicious every time. Sometimes she would break up pieces of leftover bread into it. Bake a frittata and near the end use as a base for pizza toppings. For those that have gluten problems or trying to watch carbs this might be a good way to get your pizza fix.

Those tomatoes look delicious! The whole thing does but I wish the 🍅 from the supermarket were red & juicy like that! I need to grow my own on my patio. For now I'll have to make a frittata with other ingredients instead. Unless I use cherry or grape tomatoes 🤔 Those are actually the best ones you can get from the store.

I put eggs in a large ramekin-type dish and just baked them, skipped the frying step. They came out so fluffy. Try adding a bit of water to the eggs when beating them, it makes them lighter.
I think the pan could be part of not getting such a perfect bottom ... I think my very heavy cast iron pans are not helpful. Could stainless steel work?
