Hi Alfonso! So 12C27 is a stainless steel. It is not going to rust so will be more forgiving but stainless steel as I understand it dulls easier and doesnt get as sharp as carbon steel does... Triple laminate is 3 layers when you're looking at the edge of the blade. A carbon steel layer in the middle, right where your edge will be giving you all the benefits of carbon steel, with stainless steel on the outside layers, sandwiching the carbon layer to help protect the overall blade from rust and corrosion
Unless you're very versed in knives and the minutiae or upkeep of various steels you wouldn't notice much of a difference between the triple laminate or 12C27
