Aguamiel harvest with Doña Bety

  • Aguamiel, which literally translates to honey water, is the sap of the agave plant, harvested since pre-Hispanic times to drink fresh or ferment into a thick beer-like alcoholic beverage known as pulque. To get the aguamiel, an incision is made into the heart of a flowering agave plant, causing it to produce sap, which is collected to be immediately consumed or fermented.
    Aguamiel and pulque are considered to be excellent for the digestive system and gut health overall.
    Here we visited Doña Beatriz’ farm, far off the beaten track, where she grows agave and harvests aguamiel.
