    蔥爆豬五花蓋飯 | 簡單晚餐及便當菜
    Stir Fried Pork Belly with Green Onion Rice Bowl
    飢腸轆轆的下班時間,晚餐如果能有一道簡單又下飯的料理,那就再適合不過了!
    今晚來分享一道自己非常喜歡的家常菜:蔥爆豬五花
    這道菜無論是做為晚餐或是便當菜都很合適,開胃的滋味絕對能讓你多添幾碗白飯,趕緊收藏下來,一起來試試!
    料理手札
    為避免肉片過度烹調,而口感乾柴。肉片建議先拌炒至上色備用,待洋蔥絲拌炒至軟化後,再將肉片放入鍋中迅速拌勻即可。

    食材
    豬五花薄片-140g、洋蔥絲-120g、青蔥-50g、大蒜-3小瓣
    醃漬
    醬油-1湯匙、米酒-1湯匙、白砂糖-¼茶匙、白胡椒粉-¼茶匙
    調味
    醬油-1湯匙、米酒-1湯匙 、白胡椒粉-¼茶匙
    步驟
    (1) 將豬五花薄片與醃漬之調味料拌勻,並靜置10分鐘備用。
    (2) 中火熱鍋,放入1湯匙的食用油,放入肉片拌炒至上色後,起鍋備用。
    (3) 同一油鍋,放入蒜末及洋蔥絲,以中火將洋蔥絲拌炒至軟化,再放入蔥白段拌勻。
    (4) 放入肉片拌勻,再放入蔥綠段拌炒至軟化,再放入醬油、米酒及白胡椒粉拌勻後,關火備用。
    (5) 將雞蛋打入小碗中備用。中小火熱鍋,放入1湯匙的食用油,放入雞蛋,蓋上鍋蓋悶煎60秒,打開鍋蓋煎至蛋白熟透或喜好的熟度後,起鍋與蔥爆豬五花一同擺放至白飯上即可。

    Ingredients
    140g thinly sliced pork belly, 120g onion, 50g green onion, 3 cloves garlic
    Marinade
    1 Tbsp soy sauce, 1 Tbsp rice wine, ¼ tsp granulated sugar, ¼ tsp ground white pepper
    Seasoning
    1 Tbsp soy sauce, 1 Tbsp rice wine, ¼ tsp ground white pepper
    Instructions
    (1) Marinade the thinly sliced pork belly, let it stand for 10 minutes.
    (2) Heat the pan over medium heat, pour 1 Tbsp cooking oil. Add the sliced pork and stir fried until white, lift it out of the pan.
    (3) Add the minced garlic and sliced onion, stir fried the sliced onion until soft. Add white part of green onion and stir well.
    (4) Add the sliced pork and stir well. Add the green part of green onion, stir fried until soft. Add soy sauce, rice wine and ground white pepper, stir well. Turn off the stove, set aside.
    (5) Crack an egg in a small bowl. Heat the pan over medium-low heat, pour 1 Tbsp cooking oil. Add the egg, cover the pan and simmer over medium-low heat for 60 seconds. Lift the pan lid, pan fried the egg white until firm but egg yolk is still runny. Transfer the fried egg and stir fried pork belly on the cooked rice. Enjoy!
