Homemade Raspberry Ruffles

Raspberry Ruffles are a lovely sweet coconut and raspberry confection, encased in dark chocolate. They are delicious and are also very easy to make. These would be great just eaten and enjoyed, but they can also be bagged and then presented as small gifts at Christmas.
