    Had my friend and Sri Lankan Instagrammer Naduni (@colourpop_lk) over for a cooking session and boy we had loads of fun shooting this. We made a yummy traditional Sri Lankan Pumpkin Curry since its obviously Pumpkin season. Make it and you'll love it and maybe pair it with a Pumpkin Spice Latte after!

    RECIPE
    Sri Lankan Traditional Pumpkin Curry | 🎃🌱
    Ingredients:
    500g Pumpkin
    4 cloves Garlic, chopped
    3 Green Chilies, chopped
    1 Red Onion, diced
    5 inch Pandan Leaf
    1 sprig Curry Leaves
    1 stick Cinnamon
    1/2 tsp Roasted Fenugreek Seeds
    1 tbsp Sri Lankan Unroasted Curry Powder
    1 tsp Turmeric Powder
    1 tsp Black Pepper, ground
    Salt
    Water
    1 cup Coconut Milk
    .
    Ingredients and Method for the Coconut-Rice Paste:
    1/2 cup Scraped Coconut
    3 tbsp Rice, soaked in water for an hour
    1 tbsp Black Mustard Seeds
    A few Curry Leaves and Green Chillies
    Grind everything in to a paste
    .
    Method
    Clean, de-seed and cut the Pumpkin in to squares
    Add the Pumpkin pieces in to a pot and add the Garlic, Green Chilies, Red Onion, Pandan Leaves, Curry Leaves, Cinnamon and Fenugreek Seeds
    Add the Sri Lankan Unroasted Curry Powder, Turmeric Powder and Black Pepper and Salt well
    Add water until half way of the Pumpkins, mix well, cover and cook on medium heat
    Mix the Coconut-Rice Paste with the Coconut milk
    Add the mixture in to the Pumpkins when the Pumpkins are half way cooked
    Once the Pumpkins are all the way cooked and the gravy gets thickened, take it off the stove, taste for Salt
    Done!
    Serve with freshly cooked rice with any other Curry! 🤤
