Thank you Roland for your otak otak recipe... I love otak otak but cannot find a good recipe until I saw your recipe... I will try to make it.... thanks for sharing 😊
OH, OTAK-OTAK IS MY ALL TIME FAVOURITE! I USED TO HAVE IT EVERY DAY FOR LUNCH AT A GREAT RESTAURANT CALLED 'NONYA & BABA'! IT WAS WONDERFUL! I'M SO HAPPY. THANK YOU FOR POSTING THIS WONDERFUL RECIPE!!'
Hi Roland I tried your recipe and it was delicious! But my otah turned out a little too wet. What would your recommend to make it firmer and drier? I steamed the batter in a saladmaster pan. Perhaps if I baked it in the oven? Would appreciate any advice from you thank you
Great recipe, made 10 successfully. I added prawns too, so the total weight is about 420g. Worked well, and the otah is firm and texture is good. Thank you !
Im tried muar otak otak that got add on 4-5 tiny sea prawn without blended it .. also great taste because additional whole tiny prawn teksture.. if blended prawn together maybe fish and prawn taste gone...
Hi .. good day Wow Otak2 Nyonya I like it..tq very much 👩🍳 to share the delicious recipe..long time I want to learnt this recipe ..it’s look yummy .. I will tried ... once again tq very much 👩🍳 👍
If you want to taste the fish meat, i suggest putting half in the otak paste when blending and the other half just stir into the paste. This is a nonya otak2 recipe
My boss bought a very lot of otah...Frozen otah from Malaysia..then pack with old newsp....bring home to Singapore...im very2 like otah....then maybe i'll make it my self....
Brilliant. Never knew we could make this ourselves without charcoal stove. Btw is it possible to substitute coconut milk with something else to make it healthier? Honestly I'm surprised that other than the coconut milk, otak is actually pretty healthy.
Really nice!! Thanks for sharing!! It taste like Indonesia(Balinese satay) otak otak, if I want to make it taste like Muar otak, may I know what should I change it from the recipe? Thanks for sharing!!
Hi Jessica sis. One of our friends on UA-cam shared that he used catfish to blend and then add batang fish to the paste so that the fish bits can be tasted. Yes you’re right. I’m general, any white meat fish will do - those with lesser bones will be much easier to handle. 👍🏻👍🏻
HI chef, I tried out this recipe twice and turned out very well! Thank you! I made the paste in advance, fried it and kept in the freezer till the day I need it, that way I won t be too busy preparing so many things at one go!
Thank you so much Geok Lian for using our recipe. Yay! Glad to know you enjoyed it. Also thanks so much for sharing your system to organise your cooking. Good info!
Hi Mary. Thank you so much for watching our video. We don’t have a video specially to make fish paste but we have one where we made fishballs. You can use the same recipe to make your own fish paste - just don’t have to shape it in balls. Here’s the video ua-cam.com/video/qsWsa_ngWsU/v-deo.html Happy cooking!
Thanks. I’ve now viewed the “fish ball” video. Question: is wheat flour different from plain flour? Another request please.....chee cheong fun? Many thanks again.
Hi Mary. We found a site that nicely explained the difference between wheat flour and plain flour. www.google.com.sg/amp/s/spoonuniversity.com/lifestyle/whole-wheat-and-white-flour-the-difference-between-may-surprise-you/amp Thanks for the CCF request. We also hope to make that one day.
Hi Cheng Jun. So sorry for our late reply. It depends on how big chunk your otah is. You can try 15 mins first then check to see the done-ness then gauge how long more you need by estimation. Hope this helps.
How do u managed to de-fillet the fish so nicely? I have tried but don't get such nice fillet. Is always in a mess:) Btw, is the final result salty cause I notice u also add salt in addition to belacan which is generally very very salty.
Hi D.P. Yes. Like what Fabian said, you can ask your fishmonger to help fillet for you but here’s how Roland did it at home. ua-cam.com/video/gxCB3qaFBu4/v-deo.html
I prefer to see pieces of fish meat in my otah, the ingredients that I use is more or less similar.I use cheaper fish meat i.e. the Vietnamese cat fish fillets for the blend and the more expensive batang pieces mixed with the paste before grilling :)
If frozen fillets, thaw then soak in buttermilk or DIY buttermilk ..1 cup milk with 1 tbs white vinegar ..soak thawed fillets for 15 to 30 mins. do give it a try
You had missed out an important ingredient for nonya otak otak is CANDLENUT. You can also coarsely chop the fish separately from the paste and add the fish when placing on the banana leaf. This way you can get to taste the fishmeat better.
Nice! But this recipe is still good without candlenut. The purpose of adding candlenut is to add some thickness to the mixture. This job is also fulfilled by coconut milk which can help to add a very flavourful aroma to this recipe. Happy cooking!
best otak recipe among all the others i’ve tried. seriously, try it.
Wow. We’re really flattered. Thank you so so much.

Can I omit the belacan or use salted shrimp paste instead?
Hi, how should i do it if i prefer to have chunky bites of fish when i eat the otah?
Awesome ! But is it possible to spread on Ngoh Hiang sheet n pan fried ? Just liked what you did on shrimps paste ( Din Tai Fong style. ) Thanks
That's a wonderful idea, Lester. Solid
Any white meat fish can do, dear brother? and it is not steamed but grilled?
Hi Jessica sis. One of our friends on UA-cam shared that he used catfish to blend and then add batang fish to the paste so that the fish bits can be tasted. Yes you’re right. I’m general, any white meat fish will do - those with lesser bones will be much easier to handle. 👍🏻👍🏻

How long can they be stored in the fridge?
Do I need to cook it before storing them in the freezer? How long can I keep them in the freezer?
Hihi. Yes please cook them first before freezing them. You can freeze them for one or two months - no problem. Happy cooking!
Alright, thank u so much.

Hi. Did you broil the otah ie. Just using heat from the top or bake them ie. Even heat throughout?
Hi Hui Cheok, we used the top and bottom heat to bake it. Yes even heat distribution throughout.
Can I use all-purpose flour to substitute rice flour?

Is this same processor where u shred carrots and daikon ?
Hi Ji-Eun. Yes you’re right. The food processor is from Magimix
A request please. Is there a possibility of show how to make fish paste from scratch? Thank you.

I remember my mom used to line the tray with daun kaduk before putting in the fish paste and also cover the top with daun kaduk before steaming.
Yum! Your mom sounds like a wonderful cook 👍🏻👍🏻👍🏻 Have a great weekend, Beryl!
Hi, may I know what is the brand of your food processor? Thank you!
Thank you
If I want to make a non-spicy otah, what are the ingredients?
Hi Audrey, you can omit red chilli and reduce the amount of red chilli used but actually this recipe is not very spicy.
What fish you used...?
Great
Thank you very much 🙏🙏

Spice N' Pans You are right. Candlenut if used can omit both the flour. As the latter tends to make the otak meat tougher than the former
Power bro
Well done!
Thanks🙏🙏🙏
Thank you so much Henry.
Is Kafir leaves limau purut?
Yes indeed. Happy cooking.
