here we are again, even after 5 months i’m still getting goosebumps off of oyakata san broccoli masterclass
You can feel and taste the craftsmanship, dedication and pride. This is something I experienced in many shops in Japan, it's why these places and these nights stay in your memory. It is something I think back on regularly, and something that is sorely missing in my own home country's gastronomy. Thank you for reminding me these places exist
Yea Yakitori/Izakaya nights are definitely one to remember but so much of it gets simply categorized as drunk night foods when there are indeed top level masters of Yakitori pushing it to another level. Just wanted to show case that here on this channel!

Finally had time to watch this in full after following your travels in Japan! You can see the passion as he cooks each skewer. The broccoli sequence was such a delicate balance I was getting anxious that it could burn. Like when Goku had to balance Kaio Ken with SSG 😂 all this to say, inspired to keep seeing where yakitori goes for all of us and definitely doing yakitori for the new year!

Awesome video. I tried making reservations myself well-aware of the near impossible nature of even securing one via my hotel concierge, but oh well. There's always next time I suppose. I feel like Den and Torishiki are among the hardest to secure reservations in Tokyo. There's a ton of other cool Yakitori spots like Toriyoshi that I'm excited to try out as well, so no biggie. Great video again!

this was one of the best videos ive seen in a long time. i felt very emotional when he served the broccoli and id love to try it. it started me on my yakitori journey. i made my first Tare yesterday. and i am actually heading to japan in september. i would love to get a place here but if not, i am sure ill find somewhere else delicious to eat thanks to you! Wow...this blew my mind. Chicago has some good yakitori, but this is next level..obviously because Japan! Best food in the world no question.
Just wow, I am speechless, the dedication and mastery shown by the Master has left me mesmerized. He has a vast knowledge on Yakitori and mastered everything there is to it but still is experimenting and trying out new things to take his craft to another level which inspires me so much. I have decided this will be my first stop in Japan when I get there.

Torishiki is nearly impossible to book, but Japan is Yakitori paradise with so many great shops everywhere so you're enjoy it so much.

Hundreds of Yakitori shops in Tokyo so you will be fine. Just follow your nose! I'll also be posting videos of lots of shops that I visited this trip.

My inspiration is Bourdain and his travels. Definitely would have wanted to have him try this for sure but also be able to share beers and skewers with him.

also noticed he had a side vent all the smoke was being sucked back, his charcoal was smoking even when there were no skewers above it wonder if he has some way to keep the charcoal smoking.
Most likely from residual oils dripping on. He's constantly cooking.

Thank you so much for sharing this. Watched this video 3 times already, on a tv too. So jealous but really happy you get to do something that is a dream come true(yakitori in Japan). Is his cookbook available for sale?? can't read Japanese but would still be cool to have a book with pics. Also, is he using kishu binchotan, his looks different like more chunk type pieces but I did see he had a hammer. If anyone is interested I have found links(very randomly) to channels here on UA-cam that are Japanese based channels(no English anything) and you can sit and watch a mounted cam raw footage of the chefs grilling and some videos are over 1/2 hour long. Message me if you can me to post a link(if UA-cam allows) or I can send to you directly. Its really cool you get to see them moving charcoal around and you see the sheer amount of smoke being infused to the meat. The key to that taste seems to be from the drippings of the chicken fat onto the charcoal causing insane amounts of smoke, in the vids you will see these chefs basting it with chicken fat. And to Yakitoriguy(don't know your name) thank you for this channel. It is such a treat! Seriously thank you for your content, was so happy when you started this channel.....
He's experimenting constantly with different Kishu Binchotan. Hammer is used to break and pack in the grill. The book is called Yakitori Technique. I had to have someone get it from Japan for me but that was 5 years ago.

Could the chicken's inner parts be imported from oversea? Two guys, two sticks already need 10 chickens; this restaurant alone will use 250-300 pcs in one night. /chicken. What farm could supply this many chicken hearts ?
Here in California it's very easy to get chicken hearts, livers, gizzards at most grocery stores and definitely at Asian markets.

This looks so good I think majority of the western culture would not appreciate the offals and the rareness it has been cooked to. There is nothing worse than overcooked liver and kidney.
Yea chicken supply/handling is completely different in Japan for these Yakitori shops. Fish handling and appreciation towards raw fish was quite different in the western countries before sushi become more popular so hopefully things change!
