I've ordered few days ago the one you've putted on the last place, because it has the biggest variety of colors and I want to make a BIONICLE-themed picture to hang it in my room :) If it will end up looking good enough, I'll upload a video showing how to build it and if there's anybody who already created good looking pixel art, do same thing, there's very little of custom mosaics on YT :)
