You are soooo lucky having a local butcher!!! We get ground beef in Canada that they are filling with this red water and we have our rating as lean or extra lean and these days extra lean means no fat but much more water! By the time I boil out all the excess water I can start to fry it, but it’s absolutely insane how they have changed our meat in the past 20yrs and of course the general public seems oblivious to it. You are extremely fortunate if you’re able to get venison because that’s “real” meat. I’m absolutely loving your videos, I’m not able to cook a lot of the carbohydrates or use the flour that you use because my hubby was diagnosed with diabetes so we’ve switched to high protein meals and I miss making a lot of homemade breads and all these beautiful meals that you are cooking. Homemade Mac and cheese is my all time favourite my mom taught me how to make a white sauce and then turn it into a cheese sauce and it was the most magical thing to me I absolutely love making it and now I love making roasted garlic Alfredo sauce with it too, oh my goodness I just feel sooo comforted watching you cook. Thank you for sharing your videos, I think you are a very smart lady! I just remembered when my mom did her topping for Mac and cheese she would take salt topped crackers and she would put them in a ziploc bag and smash them up and then sprinkle them on top of the Mac and cheese and then she would put sharp cheddar and then she would sprinkle pepper and smoked paprika on top and then she would add dots of butter all over and then she would bake it and it would be a lovely topping and she always used a can of whole tomatoes that she would mix in to her macaroni and oh my word delicious and I didn’t like tomatoes but I’d always eat them in Mac and cheese 😂

His diet changed a lot but he couldn’t tell much different in ding this for soups an spaghetti recipes. We live on venison in the winter months at our house. There's a il trick that you can do to use fresh venison. Soak it in milk or salt water over night. It will draw out all the extra blood and that gamey flavor. It works with larger cuts of meat, not ground.
I got my “big daddy” stainless bowl from the Amish store(where I need to go & restock my staples) several years ago. Yes, they’re a bit pricey but they’re SO worth it if you can or do any big batch cooking. I spray it with cooking spray to make my candied popcorn(caramel or cinnamon imperial) & it’s easy to clean too.

What you call beefy Mac & cheese, we call “dog food.” 🤣🤣. I don’t know why it’s called that. My husband grew up on it and his mom always called it that. The funny thing is that I would make it like you did but my husband and his family like it made with Kraft Mac & cheese from the box 😝. I think it’s horrible made that way so I don’t eat it. Seems to me nobody adds celery to their meat, always a good extender, but my favorite is cream of celery soup(homemade of course)….I use celery all the time🤷🏼♀️just a thought! Always great videos❣️

In a pinch, a few times, I've cooked a lot of pasta in less then ideal water. I just stirred more often,and made sure to keep it at a good hard simmer

Yes, thaw it first. leave the foil on until the last 10-15 minutes to brown.
