Try this sauce but sub in the Truff hot sauce. The slightly sweet earthy notes of that goes really well with pork. I’ve been doing that with my mop sauce on ribs and love it. My sauce is a bit different though. Apple cider vinegar instead of white. A little bit of brown sugar to balance the flavors. Rest is pretty similar.
Subscribed and liked....and I have a technical question later in this comment.... First off, the Chud Box, or similar direct cookers are game changers as far as I'm concerned. Buuut, unfortunately, the price for these cookers is out of reach for most backyard charcoal jockeys. That said, as you have stated in some of your videos, there are other less expensive options out there like the good ol Weber Smokey Mountain etc., etc. Then, there are backyard DIY'ers such as myself who try to build there own stuff. My question to you is a technical one; what is the distance from your cooking grate to the floor of your cooker where the charcoals sit? Thank you if you will consider my question. rocket
Great video, thanks! Curious why no added wood splits or chunks to the charcoal or straight wood coals? I prefer direct heat for ribs but usually addd soaked wood.
I usually just go charcoal only when cooking direct heat. I have added a wood chunk in the past for other cooks but ribs I prefer it without any additional wood
Also...Chudbox. Did you get a painted version or did you burn in the patina? Do you keep yours covered or out in the open. I'm wondering how battling the rust works with them.
This looks really good. What are your thoughts on the Chud Box compared to El Patron? El Patron had about twice the cooking surface and has fire bricks on the bottom. If you had to buy all over again which would you choose and why?
The El Patron looks pretty slick. I love my Chudbox though. Have two of them and they’re my favorite cookers. Just lean, mean direct heat cooking machines.
@@swinebovinebarbecue If you watch LSG’s video where they cook a rotisserie brisket overnight at 225 F Chris says he uses 40 pounds of B&B lump a three splits of post oak. Wow! The extra cooking area might be nice but it looks like El Patron needs a LOT of fuel!
Hi Drew, now that rack of ribs looks amazing! When it come to cooking on direct heat. What are your thoughts if it’s necessary to add a temperature regulator such as the Fireboard 2 or BBQ Guru fan? I’m having a hard time if I should add one to my direct fire cooker? My direct fire cooker will come with a removable heat deflector plate. Looking forward to your response.
I’ve never used a temp regulator. The Chudbox is pretty easy to dial in. I enjoy the process of figuring out a cooker and how to keep consistent temps. I know a lot of people that love temp regulators on kamado style cookers though.
