Loaded Sweet Potato w Golden Mushrooms
1 lg. Beurgard Sweet Potato
1/2 red onion
1 stalk green garlic
1 stalk spring onion
1 hand Golden oyster mushrooms
3-4 red radish
1/2 block Old Noble Cave Aged Cheddar
Cilantro
Olive oil
Salt and pepper
Coat the sweet potato with oil and prick holes over the surface. Roast in the oven at 375 for 45 minutes until just soft. Set aside for about 10/15 minutes before slicing open.
Break the mushrooms apart, drizzle with olive oil and roast until browned and a little crispy. Season with salt and pepper once finished roasting.
Thinly slice the, garlic, radish and spring onions. Split the potato 3/4 open so it sits like a taco. Grate half of the cheese on the open potato. Top with the roasted mushrooms, red onions and garlic. Grate remaining cheese over the top. Melt until gooey and bubbly.
Top with cilantro and spring onions and serve hot. And as always, please enjoy.
