Looks like you did really well.. Grandmama always baked our marsh hens. They're the best tasting birds ever. The way our inlet was behind the island (our back yard) the high tide would leave small clumps of tall grass (islands we called them). That's where the birds nested or roosted. We never got out of our boat. We could nose the boat up to the grass, and the hens would fly out. Thanks for showing more about my favorite fowl.
I've hunted waterfowl for decades but took a couple of days to try rails (Sora and Virginia up in Missouri). I was very happy with the flavor. I'd compare them to dark meat from a free-ranging chicken. I just seasoned them and grilled them over charcoal. Not much to them but, what's there is good.
Wow this makes me emotional! These birds is what my fam and I grew up on by the Cuban 🇨🇺 swamps , my godfather just went out hunting these past weekend and got like 50 never I can’t be there to hunt but he sent me the pics . Good hunting man!!!!
Tug those mash hens I'm my opinion are better than chicken, I fry the in Zatarains fish fry, flour, make gumbo, or stew and smothered in onions it all good but the fish fry is awesome tks man love that video.

I used to hunt them in the black tip grass marshes down south of Savannah. Just walk around until one jumped up, usually right in front of me! I only ever took 1 or 2, but I remember them being pretty tasty. Cool video!
Marsh Hens are from the Rail family. We have them in Louisiana as well, slightly larger here as compared to the ones you shot. Maybe those were young ones. Tasty little birds, not as gamey as most ducks. Good day.

Lol when I was a kid I was always amazed at how fast someone could yank the skin or fur off a squirrel or rabbit or something like those once you knew the trick to it. I always wonder if it’d be that easy to skin me, lol I was told it would be.
Good way to clean them how ever to speed up cleaning. Use the scissors cut the head off, then cut both wing tips and then. Both legs off. This way you just pull the skin and feathers completely off since they are cut already. So you don't have to stop after pulling each leg and each wing grab scissors, then cut it then pull the next one then grab the scissors and keep repeating. Cut everything off in the beginning. And it's easier to pull off also plus you don't have to stop. One more thing take the whole bird tie it up so the wing and legs are against the bird. Rub it with olive oil and use your seasonings. Run it in the cavity and everywhere. Then put the birds breast side down. Because breasts are as maoist or juicy as the rest of the bird. Quail also. Anyways as you start cooking it it takes all the juices from the meat everything goes down to the breast and. Puts that flavor in their breast!
We don’t have the numbers of mud chickens Tennessee that you obviously have in Florida. I wouldn’t hesitate to cook one . They are larger than a quail . I had several tugboat crew members in my dental practice . They ran out of St Louis . I always got a kick out of listening to the tails of their pranks while on the boat . They ate real good and had a lot of fun ……… a big band of brothers. I’m sure that they would never have turned down a marsh hen !

It seems y'all preserved the bounty of the state and kept the corporations from unicropping acres of land (except for oranges back in the day) and polluting the soil and waters, without even trying. I know there's some crazy stuff happening in your big cities, but Floridians living elsewhere are truly blessed.

@@LarryMarsh they are near threatened due to their habitat. The contaminated run off and lack of wetlands. Nothing to do with hunting and they sure are not being over hunted….
