Full recipe is below. These ingredients are listed as a % of the total meat weight. We converted everything into grams/kilogram. Use the “Master Recipe” as your guide when you try this recipe out for yourself.
Master Recipe %
-Deer 70% & Pork 30%
-Chilli Flakes 0.01%
-Dried Sage 0.045%
-Brown Sugar 1%
-Kosher Salt 1.4%
-Sweet Paprika 0.42%
-Black Pepper 0.25%
-White Wine 7%
-Vidalia Onion (1 medium onion per 3.5kg of meat)

-Deer 4750g, Pork 2036g= 6786g Total
-Chilli Flakes (0.001 X 6786 = 6.79g)
-Dried Sage (0.00045 X 6786 = 3.05g)
-Brown Sugar (0.01 X 6786 = 67.86g)
-Kosher Salt (0.014 X 6786 = 95g)
-Sweet Paprika (0.0042 X 6786 = 28.5g)
-Black Pepper (0.0025 X 6786 = 16.96g)
-White Wine (0.07 X 6786 = 475g)
-Vidalia Onions (2 medium Onions)

Ive done some deer pepperettes, been experiencing sausage making for around 2 years, almost time for some kielbasa, look forward to future Videos

Great video. Whats the shelf life on these sausages made fresh vs frozen? Do you ever freeze these and eat them after without mixing preservatives and nitrates ?
Great question! I find that if you vac seal the sausages they can stay in the freezer good for a year to a year and a half. If you wrap them well in butcher paper probably closer to a year in the freezer. I don’t believe Dino has adjusted the recipe to include any nitrates preservatives in the past, he has always treated them as fresh sausage. That being said, I am sure it would be easy to adjust the recipe to include prague powder #1 and pre cook them ahead of time to keep longer in the fridge or freezer. The Deer sausages I gave Dino as a thank you at the end were smoked and preserved with Prague Powder #1. The recipe I used for those was a recipe from Duncan Henry called “Jalapeno Cheese Smoked Sausage. How to and Recipe Included, for FREE.”. He includes the ratio of perservativesin grams per kilogram. I would imagine that these fresh sausages (if you had them wraped in the fridge) they could last for a week before needing to cook them.
