    RECIPE:
    INGREDIENTS:
    Basmati rice - 1.5 cups
    Vermicelli - 1 cup
    Water (for non-stick vessels) - 3.25 cups
    OR (3.5 cups otherwise)
    Butter - 3 tablespoons for rice + 1 tablespoon
    (for sautéing berries/raisins and green chillies)
    Olive oil - 1/2 tablespoon
    Goji berries OR Raisins - 1/4 cup
    Black pepper - 1/2 teaspoon
    Green cardamom pods - 10-12
    Cloves - 4
    Salt - 3/4 teaspoon OR (as needed)
    Sugar (optional) - 1/2 teaspoon
    Lime juice - 1 teaspoon
    Green chillies (whole) - 4 (sautéed for garnish)
    Chilli stir-fried meat (for center garnish)(optional)
    Finely chopped fresh Coriander leaves and Mint leaves for garnish.
    METHOD:
    Rinse the Basmati rice until the water runs clear. Then soak the rice in water for 30 minutes.
    In a nonstick pot, heat olive oil and 3 tablespoon of butter. Saute cardamom, cloves and black pepper (over low heat).
    Brown the vermicelli, then add the rinsed rice, stirring gently for 2-3 minutes.
    Add water, salt, sugar (optional) and lime juice (over high heat). Bring to a boil, then simmer covered until done. (7 to 10 minutes. Time may vary based on the type of rice and vermicelli)
    In a separate pan, sauté goji berries or raisins in butter until plump.
    Open the lid to check for any water at the bottom of the pot. If there is no water, cover the pot again, turn off the flame and leave the pot on the same burner for another 20 minutes.
    After 20 minutes, open the lid, fluff the cooked rice and garnish it with sautéed goji berries or raisins, finely chopped coriander leaves, mint leaves, and sautéed whole green chillies.
