Healthy & Easy Chickpea Salad | Protein-Packed with Delicious Homemade Dressing #salad #salads

Quick to make and bursting with flavors, it's the perfect light lunch or side dish. Our homemade dressing adds an extra layer of deliciousness.

RECIPE:⬇️
INGREDIENTS:
Chickpeas (Channa) - 3/4 cup (soaked overnight)
Garlic cloves - 5
Olive oil - 1 tablespoon
Water - 1 cup
Salt - 1/4 teaspoon
Cucumber - 2 (medium)(diced)
Capsicum - 1 (diced)
Cherry tomatoes - 21 (halved OR quartered)
OR (2 medium sized tomatoes)
Green apple - 1 (peeled & diced)
Coriander leaves - 2-3 tablespoons (finely chopped)
Mint leaves - 3-5 tablespoons (finely chopped)
Onion - 1 (medium)(thinly sliced)
Sumac -1/4 teaspoon (optional)
Honey - 1/2 teaspoon
A pinch of salt
DRESSING:
Lime juice - 2-3 tablespoons
Extra virgin olive oil - 3-5 tablespoons
Salt - 1/2 teaspoon
Honey - 2 tablespoons
Chilli flakes - 1/2 to 1 teaspoon
METHOD:
Rinse and soak 3/4 cup chickpeas (channa) in water overnight.
Place the soaked chickpeas, garlic cloves, olive oil, water and salt in a pressure cooker.
Pressure cook on low heat for 10 minutes until tender.
Set aside to cool down to room temperature.
Dice the cucumbers, capsicum and green apple.
Halve or quarter the cherry tomatoes.
Finely chop the coriander and mint leaves.
In a small bowl, mix the sliced onion with sumac,
1/2 teaspoon honey and a pinch of salt. Set aside.
In another small bowl, combine lime juice, extra virgin olive oil,
salt, honey and chilli flakes. Mix well.
In a large bowl, add the cooked chickpeas (cooled to room temperature),
Diced cucumbers, capsicum, cherry tomatoes, green apple,
finely chopped coriander and mint leaves.
Pour the dressing over the salad ingredients. Toss to combine,
adding more salt if needed.
Add the onion mixture to the tossed salad and combine again.
Adjust seasoning if needed with additional lime juice,
chilli flakes and olive oil.
Refrigerate for a while for flavours to meld.
Serve chilled.🥗
