How to Make Fada Lapsi (Traditional Gujarati Dessert)

  • Hey everyone! Today, we're making a delicious and traditional Gujarati dessert called Fada Lapsi, also known as Lapsi or Fada ni Lapsi.
    This simple recipe uses broken wheat (dalia) and is perfect for satisfying your sweet tooth without any fuss. We'll be making it in a pressure cooker for extra speed and convenience!

    Ingredients:
    For the Pressure Cooker:
    3 tablespoons Ghee (clarified butter)
    ½ inch Cinnamon stick
    2 Cardamom pods
    2 Cloves
    1 cup Dalia (broken wheat)
    4 cups Hot Water
    1 cup Milk with Saffron
    1 cup Sugar
    For the Garnish:
    1 tablespoon Ghee (clarified butter)
    2 tablespoons Cashews (chopped)
    2 tablespoons Almonds (chopped)
    2 tablespoons Raisins
    ¼ teaspoon Cardamom powder
    A few Saffron threads (optional)
    Instructions:
    In your pressure cooker, heat ghee over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Let them crackle for a few seconds.
    Add the dalia (broken wheat) and roast it for a minute then roast dry fruits with it.
    Pour in the hot water and stir well. Close the pressure cooker lid and cook for 5 whistles on high heat. Let the pressure release naturally for 10 minutes, then release any remaining pressure manually.
    Once the pressure cooker has released pressure, open it and mash the cooked dalia slightly with a spoon. Add the cooked dalia to the pan with the milk and stir well to combine.
    Add sugar and 1 Spoon Ghee and Mix it well.
    Pour the sweet dalia mixture into serving bowls. Top it with the fried nuts and raisins. Sprinkle with cardamom powder and garnish with saffron threads (optional).
    Tips:
    Adjust the amount of sugar to your taste preference.
    You can substitute chopped dried fruits for the raisins if desired.
    Let the Fada Lapsi cool slightly before serving for a warm and comforting treat.
