You created waaaay to much work for yourself! Faux fur is sewn just like real fur, with 1/4” seam allowances and zigzag stitch that swings off the edge of the fur as you sew, similar to whip stitching the edge together. This creates a very fluid and fairly invisible seam on the right side. The fur is tucked in as you go, as you were doing. Using a 5/8” seam allowance and shaving the fur is unnecessary. Your cutting technique was correct, but you would never use a rotary cutter!
Yes, unfortunately I’ve got a tendency to unnecessarily overcomplicate things. Appreciate the advice on sewing fur. At the time I hadn’t come across resources similar to what you’ve mentioned but I’ll keep it in mind if I work with fur again. However, I do still feel reducing the bulk by shaving does make it easier on the machine (however cumbersome)
