The Dunkin Hines cake is wonderful. I made cup cakes adding the pumpkin and a handful of Lilly’s Pumpkin Spice chips. No frosting needed and they were wonderful! Thanks for this!
I added a stick of melted butter bc FAT, a tsp of vanilla and pumpkin pie spice…they came out with more of a pumpkin pie texture and the outside was firm enough to hold. If if had Lily’s white chocolate chips I’d have added them and I bet it’d have been heaven! Soooo good, even my teenagers and toddler loved them
I just made these with 1/2 can of pumpkin, 1 egg, 1/4 cup of water, 1 tsp each vanilla and maple extract, and 1 oz of chopped walnuts. Oh man....almost too good to keep in the house! Warm out of the oven they will fall apart, had a second mostly cooled with butter on top, it was fantastic. They're going to be killer with coffee in the morning. I came out with 4.2g C, 6.2g F, 3.5g P. This cake mix is like a blank pallet with endless possibilities. I'm thinking blueberries with a almond meal crumble on top. 😋

Use to do this with spice cake mix and pumpkin in my non keto days, so I thought why not try it with the Swerve. I was also worried it wouldn't turn out, but I was so wrong! So yummy! It truly is a cross between pie consistency inside and a muffin texture outside. ❤❤

I’ve been making chocolate, vanilla, & spice cake mixes for ages with pumpkin instead to lower the fat… pre keto…. I add some almond milk or water, or just one egg to lighten it up to a more cake consistency or not for more brownie like… chocolate chips are a good add in.
I made these in my mini muffin pans. They are amazing! Instead of Duncan Hines, I subbed in the self-rising flour mix from Victoria's Keto Kitchen and some pyure and they are amazing!
How much of the Jordan’s syrup did you add? I’m going to add it to mine along with the pumpkin pie spice but don’t want to overdo it and mess up the consistency 😬

Oh my goodness! I would probably also add in a scoop or 2 of Keto Chow Pumpkin Spice Caramel to up the protein and nutrition, or just use the regular cake recipe and some Simply Delish pudding or Jel to make pudding cakes or the "Jello poke cakes".

I’ve been making these for a long time. I used sugar free vanilla creamer to add to it. Also some nuts. If you can find sf peppermint at the stores during the holidays … they are so good. You just need a couple of teaspoon !!! My go to holidays treats
I did Weight Watchers years ago and they taught us the same recipe. Of course, there was no KETO cake mix at that time, but we used the Spice Cake mix. Soooooo good! Though I've never tried it, I wonder if whipping a couple of egg whites till stiff, then folding them in, would lighten up the batter a bit. I remember the texture being a bit gummy so the fluff might help.

I wander if you Could use that cake mix and whatever flavor diet cola you like, such as diet orange crush and make it taste like a creamsicle?

Add a 3 eggs and a splash of buttermilk and a Half a teaspoon of Baking soda. They rose beautifully!
