In Syria and Lebanon we make also za'atar croissant and it’s soooo delicious.
Thankful to get my bread from here. High quality bread and after watching the videos, I can see how much work gets put into it.

Thanks for inspiring me to try new stuff. Plan on trying to make pastry dough. Just ordered some flour from a local small mill. Fantastic to talk to someone at the mill that could explain to me the properties of the various flours and make some recommendation's based on what I was trying to make. I have been buying all of my beef and veggies from local farmers. Buying flour from local mill is just a continuation of going more and more local...Thanks!!!!!!!!!!

Pretty sure Amanda would have told you that za'atar croissants have been around in the Middle East for a very long time. I used to eat them for breakfast every day more than 21 years ago when I lived there...
That’s awesome! I haven’t come across any in photos. We are itching to visit Lebanon at some point in the future. Amanda last visited when she was 9.
@@ProofBread Ahh, Amanda was probably a bit young for za'atar croissants! My wife said her university students would bring in a big bag of them for everyone to share, they are like a replacement for za'atar manakish (the flatbread/pizza you mentioned) so popular for breakfast. Some kids would dip them in labneh (soft cheese). They're best in Beirut, but for sweets you should head to Tripoli for the best baklava in Lebanon. As a home sourdough baker (the pandemic crushed my commercial ambitions...) I've really enjoyed your videos, looking forward to seeing your full move to the new joint...
