I am 58 and have made a basic yeast bread and yeast rolls since I was 7 years old when I made my first four loaf recipe with only guidance from my Mom. She learned from her Aunt and Uncle how to bake most baked goods from scratch as did I when it was my turn. They never bought bread. They mostly made potato bread. They canned all their own vegetables and fruit. Bought their meat from a butcher and got their milk from a dairy farm that had a drive thru built into the pasture off their farm, all of this in SoCal back in the 1960's. They are all gone now. I'm the age they were then and I miss them so much.
25 Minutes just flew by and I feel like watching another hour at least... thats a rare feeling. Wish you and your people all the best with lots of fun, success and growth! Your home bakery was the proving ground that enabled you to design an efficient store front bakery based on everything you learned. I can't imagine a better implementation than you have here, but I'll bet your continuous improvement mindset will show me what's possible. Congratulations!
If you want to up the level even more in the "bucket filing station" you could have an electrovalve on the faucet and a sensor that measures the weight of the water and have a small numpad where dial in some number and the valve opens and let's water run until the selected weight is reached. It would be quite easy to do and it would be so cool

This is an amazing setup, never seen a bakery so clean and spacious. I have a levain machine at my work place and I can't say I like it, it's hard to clean and difficult to gauge how much is left inside so you can't be precise with innoculation percentages. It's an older model though so hopefully you find yours actually helps with production, I still find the old school way of putting in containers better because you can easily see when it's peaked

I understand your excitement. I have been baking my own bread, buns, cakes etc. for the past 10 years or so and finally got myself a stand mixer a few months ago. That was very exciting and while the excitement has worn off the appreciation is definitely still there. Good luck with opening day.

4:07 I could imagine you possibly getting the water system automated by the scale where it slows the water flow down as it hits 19 and then stops at 20 then sends out a beep if you want. Probably not that bad to do as long as the scale remains accurate. 18:40 Should probably get some plug covers just in case a spark hits some flour.
I was about to say the above 2 points. Also, the large mixer had a scrapping metal sound. Was the trolley handle to close? All in all a new space needs time to work out the kinks. Have you thought about uniforms for the bakers. What you are wearing is great Jon. Sure you have a plan. I teach bakery classes at the CIA in Hyde Park, NY. WOW, I am enthralled with the wonderful layout. The "I can just roll this huge vat around, no worries" and do a 2nd one back to back. The different temp walk-ins, the flow through system, all of it. A friendly point, flour dust and copper prongs don't go well together, electrical covers would be good (for the prongs). Your fill spout (larger ID)

Also, I would scale that batch recipe down to exactly 4 bags of flour, rather than deal with adding some marginal amount from a 5th bag

15:24 I think the outlets should have a cover when not using them. Otherwise, flour and humidity could cause the electric problems inside the outlet.

I'd be less worried about a spark and more just worried about crud getting into the receptacles and fouling them.
