  • On this segment of Innovation Nation, Albert Lawrence meets with Thomas Cheng, the co-founder of the Brava Smart Oven that cooks food using infrared light.
    The Brava oven can heat up to 500 degrees in one second and cooks food faster and more efficiently than traditional convection ovens. The Brava oven can also cook different foods simultaneously by using three distinct temperature zones.
    How it works? Brava uses a combination of visible and infrared light to cook food. Unlike air or cast iron, light can be easily targeted and adjusted. Brava’s lamps can turn on, off, and in between at the flick of a switch. And like spotlights, they can focus their energy on a specific zone without heating the area around it. This means faster cooking with no flipping, stirring, or preheating. Plus, there are no emissions or microwaves.
    Brava has six high powered lamps that get hotter than a wood fire pizza oven, eight temperature sensors, two particle detectors, and a camera that you can watch from your phone. Brava uses these sensors to adjust as needed, and to constantly improve the service.

      It's not burned. That steak underwent the Maillard reaction.
