    This is one of the most underrated UA-cam channels out there.
    I already tried two of your recipes (Pasta alla Gricia and Penne alla Vodka) and they were absolutely delicious (everyone I cooked them for loved them!).
    The quality of your videos is beyond every other cooking channel I like to watch on here. Presentation, shown techniques, replicability, entertainment and your love to details and explanations are spot on.
    This is real craftsmanship you are showing us here in great detail and the best thing is: Your tips actually work really well! One can learn a lot here to further improve their own skills.
    And thats why I love watching cooking videos instead of just reading plain text recipes, because there is so much that can be delivered via image and audio.
    Keep them coming buddy! I'm gonna go through your whole library of recipes and tips and get even fatter on the way 😂.

    Brother, I have forever had Food Wishes as that channel that I watch not only for the education, but for the viewing pleasure. You are now the second on that two-channel list. Love the direct nature of the material, which matches the simplicity of the Italian dishes you lean toward. Your media makes my life better.     Thank you for this recipe! I must have watched hundreds of recipes on youtube, and this is the first time that I've actually made a recipe after watching it. I've made these cookies using the exact method described here to the letter, with the best ingredients available: great 60% chocolate, high quality flours (easy to find cake and bread flours where I live), etc...
    The results: best cookie I ever ate, I got extremely good feedback from my friends and family who tasted it, this cookie is simply perfect.
    Some comments:
    The quantities in this recipe gave me cookies FILLED with chocolate, I later tried to make a second batch that had somewhat less chocolate (about 10-15% less), and the results were excellent, there was still plenty of chocolate but you also could see some chewy doughy parts, which was nice. In this second batch, I also reduced the amount of sugars by 10% and it wasn't a problem.
    In my oven, 18 minutes baking time is WAY too long, I assume that this is because every oven is somewhat different. I used your rule of thumb that we should take the cookies out of the oven when they start to crisp around the edges (was about 14 minutes in my case), and it worked perfectly. The cookies came out exactly as described: crispy around the edges, chewy in the middle, and gooey chocolatey in the center. The flakey salt added such a nice "kick" that it cannot be ignored. It was important to let them cool down fully, that's when they became the most chewy.
    Due to requests from my friends, I experimented with adding some white chocolate to the cookies, those turned out amazing as well, if you like white chocolate they're even better.

    I've been using this recipe as a base for different kinds of cookies. I make a Garbage cookie which has pecans, oatmeal, rice krispies, and coconut in addition to jacques' chocolate discs. Friends and family can't get enough. I also do a pecan chocolate disc, and a macadamia coconut milk chocolate cookie, with jacques' milk chocolate discs. This recipe is so versatile, you're only limited by your imagination. Did I say I make mine 6oz.

    I've been thinking about chocolate chip cookies for about 3 weeks now and had been working through a number of recipes looking for this one. This is it. Thank you. Managed to get 2 dozen ice-cream-scoop sized cookies out of the recipe. Question: have you tried it with milk chocolate callets/ buttons?
    If folks can't find cake flour at this time, you can "make" a cup of cake flour by taking 1 cup of AP flour and removing 2 Tbsp and then replacing them with 2 Tbsp of cornstarch. Works in a pinch, or during a pandemic.

    I made these with all purpose and was too impatient to age the dough, but they are still fantastic! Definitely loved the melting chocolate chips, will do this from now on. Perfect balance of chewy and crispy

    Made these last night. I have a personal recipe where I use dark brown sugar, brown butter and cocoa powder. Either way, these were DELICIOUS! I’d like to incorporate both this recipe and my own. Very interested to see how they would come out. The cake flour gave it a different texture but not too different from the all purpose/bread flour recipe I use. Thanks for the content. Can’t wait for the next recipe!

    This is also my go to chocolate "chip" cookie recipe. Once you've had them, you never go back. Once you're known for making them, that's all they ask for. Every party, every event, every holiday - "Please make THOSE cookies" !!! They are addictive. I've managed to scale them down ever so slightly - not too much because the discs are too big for a small cookie. I weigh each dough ball. They're still a shareable size. I buy the discs once a year from Jacques Torres when he does a shipping special - usually before the holidays. I stock up so I can make them year round. Thank goodness for a double oven stove.!!! Love your video.

      1/2 cup sugar
      1/2 cup light brown sugar
      2 teaspoon vanilla extract
      2 large eggs

    Loved them! I'll admit I melted the butter and added walnut pieces and a quarter cup of ground walnuts. Mom always did that and well...the chocolate chip cookie style everyone likes best is the one their mom made!

    Dude, Thanks for making this as I'm currently in pursuit of the perfect chocolate chip cookie for my kitchen and I'm definitely going to try this. As I think this is the first time I've commented, let me say...first, I love your channel and your videos. It's definitely one of my fav's. Second, I've made your Bolognese sauce and your Philly Cheese steak sandwiches and both have become the way I do these dishes in my kitchen. I'm anxious to try more of your recipes when I have time to experiment. And lastly, the Willie Wonka "pure imagination" music in this video was genius.     Been learning to cook and bake during quarantine watching youtube videos and a smattering of success has been heavily punctuated with failures. I am a scientist by profession, so following a recipe is actually child's play. I suspect there are a lot of imperfect recipes out there, and yes, Im being quite nice saying that, given the frustration Ive felt from repeatedly bad outcomes with wasted time, energy and money. However, I have to say that this cookie (and his other recipes as well), which I made today, is exactly as it looks in the video, as long as you follow the steps accurately. I have renewed optimism for my amateur culinary future! Thank you!

    Followed all the directions on these, except, I used piloncillos in lieu of brown sugar. I had to hammer those darn things down and then grind them, lolol! Hoping they will turn out good, as I promised I would make holiday cookies for the front office of my apartment complex since they do so much for us residents 😊 just want to say, thank you for your awesome recipes/guidance, I love to cook/ working with my hands and I love when others enjoy my cooking 🤗

    Steve, I agree it is most important to find a recipe by a master and follow it to the letter before experimenting on your own, otherwise you won't have a standard against which to judge your modifications.

      If you want to make your own cake flour at home, it's easy. :D For every one cup of cake flour: Use one cup of all-purpose flour, remove 2 tablespoons of the flour and add in 2 tablespoons of cornstarch and whisk well to combine. It saves money too since you're not purchasing a "specialty flour". The cornstarch makes the flour lighter.

      @@p337awesome the survival mentality from things such as nuclear, zombie things or other crises is more prevalent in american societies so they tend to hoard at an extreme level. They used to before covid. There's ton of videos of crazy people with shelters stocked to the brim with guns and food. I guess it stems from this independent and liberal (selfish) mindset they have. And maybe a bit of holywood.

    Just tried the recipe and love it!!! The only thing different I did was use Ghirardelli’s semi sweet chips and added pecans. Next time I’ll try the chocolate discs. Totally loved the shape and the crunchiness of the cookie and I baked some immediately.
    Cookies didn’t spread as much… noticed afterwards the ounces conversion doesn’t match a baking calculation. Just wondering if cake flour is a lighter flour than bread measurements in grams differ 🤔 (will have to study this further)

      Adding pecans to chocolate chip cookies is magnificent, it just brings the cookies to a whole different level in my opinion. I make 5 to 7 dozen cookies every Christmas for my household and to give to my family and I add pecans every time (except for my sister in law, she has a nut allergy so she just gets plain chocolate chip)

      When baking using grams as measurements, I always use the grams listed on the manufacturer's packaging rather than what someone's recipe indicates which can be different than what is listed on the packaging. I find this especially true with flours. So, for example, if a recipe says 1 cup of flour is 128 grams but you're using King Arthur Flour which according to it's packaging is 120 grams for one cup, weigh your flour by the King Arthur grams listed, not what the recipe grams shows. Hope this makes sense and helps.

    Would highly recommend investing in an airbake cookie sheet, they are unparalleled. Helps the cookies from getting too brown on the bottom, and ends in a more even bake.

    Well, I did make these and they are really good! Had to order the chocolate discs, and used pastry flour instead of cake flour because it's nonexistent it seems. They are awesome once cooled a bit and still gooey inside. Also, not baking all the balls and keep some wrapped in the fridge so you can have a warm fresh one when ever! I froze some too.....

    I know this is completely irrelevant to the video, which I watched last night. Loved. But because this is your most recent video I just want you to know that I love cooking homemade. I took it upon myself tonight to just throw something together. Literally from my brain. That's not something I've ever done, but have you to thank for the confidence and push to do so.     I'm the cookie monster of the family.. each person has their fave sweet treat, be it chocolate, cake, candy but mine are cookies and one of my favorite cookies is choc chip cookies.. I've watched a bunch of recipes and have a list to try but these look fantastic... absolutely amazing... also, I think the universe is giving me a sign as I see you uploaded this on my birthday 2 years back so, this is probably the one I should try first...     I loved watching this (and love that I learned something new about flour) but my first thought when I heard why you chose the disks vs. classic chocolate chips was, "But I WANT the 'bite of chocolate' that is not 'melted in'." I guess that's one of the fun parts of cooking and baking - you do you!
    I haven't watched the scroll in a long time so I loved seeing how long your list of sponsors is getting! Your channel is SO underrated!

    Made ‘em❣️ Were soooo yummy💫Textures were indeed luxurious! I did reduced the sugar, so they came out a tiiiiny bit puffier than needed - I’m assuming I should reduce the baking powder and soda, since it doesn’t have to fight the weight of as much sugar??

    Throw in a tbsp of corn starch and replace 1/4 cup of the sugar with maple syrup. Cookies stay moist and chewy. Also if you're like me and you don't want crispy bottoms, bake on a silpat. They're cheap and last until you do something really dumb to them.

    You can freeze the cookie dough as well!! But I'd leave off the salt if you're going to do that. Something weird happens if you freeze salt and then try to bake it. Just pop the salt on right before you put them in the oven :)

    For those outside the US, where cake flour is not a thing, you can substitute with all purpose flour and starch (2 TBS per cup flour). Hope this helps some people

    A low protein (10%) all purpose flour like Gold Medal Bleached APF should be a good substitute for the two flours. Bread flour has about 13% protein, and cake flour has about 7%. Since the recipe uses the same amount of both flours, that’s 10%.
