Actually that's part and parcel of the whole Turkish ice cream experience. When I was on vacation in Turkey several years ago, the vendor made a show of the whole thing on top of this sort of "Here's your ice cream - or not": He basically stretched and threw that thing around like Italians do with pizza dough. It was like looking at a strange combo of pizza dough and bubblegum, without the ice cream melting at all. It was fun.
