@Caffeinated Critic It was an Xbox console exclusive (PC really doesn't count since Microsoft puts a lot of their games on PC). But Microsoft are the one's that got this rolling, so they did have console exclusivity. The only reason it's coming to Switch is because Microsoft approached MDHR

It's more about Microsoft actually, they purchased the rights of the game, and there was rumors that a huge partnership would happen, i noticed Microsoft and Nintendo are good friends since the Nintendo X Xbox Crossplay event in Minecraft

Many people wanted the port from the beginning. Due to Microsoft and the company only doing Xbox and Pc it disappointed many people as It did not come out on PS4 of switch.
Not to mention but Switch is the hot console right now. The newest hybrid console. You can play cuphead on the go instead of just at home, what more can people ask for
