OK, Quang, I was born & grew up in Minnesota, where the diet there is very bland. The only seasonings they use on their food is salt & pepper. That's it! I moved to Dallas, Texas in 1984 when I was 24. In Texas, I discovered a whole new world of food using so many different kinds of seasonings I never knew existed! I fell in love with Southern cooking, Tex Mex, Mexican food, Indian food, (one of my top favorites) and Soul food, which I never knew existed until I moved down South. I have no idea the seasonings that go into Soul Food,, but as usual, Quang, the Soul Food you cooked looks SO good & delicious! I am surprised,, however, that you didn't use Tabasco sauce in some of the food. But then again,, you do know what you're doing, and I still have no idea on how to cook Soul Food with the exception of meatloaf. A black lady who was a cook taught me how to make meatloaf. Smoked turkey neck, onion, garlic and chicken broth is what I use in my greens. The smoked turkey gives my greens a smoked flavor while allows me to control the sodium level. If it needs salt, I'll add it to my taste.

I like how you processed those greens. My recipe is pretty similar, except I add bell pepper onions, bay leaves, jalapeño , and smoked turkey wings. You did great!

As a southerner, I take no issue with your cooking it all looks great. The only thing I would add would be a peppered vinegar sauce. Use an old soy sauce bottle, get some red or green Thai chili peppers and cut about 5-7 in half and put in the bottle. Put a couple cups of vinegar in a sauce pot and add 1-2 Tbsp do sugar and bring to a boil. Then pour in the bottle with the peppers. Wait 24hrs and then put that shit on everything. You will love it. Oh yeah.... And your missing something here.... A GLASS OF ICE COLD SWEET TEA!!!
My moms collard greens recipe (because she is the only one that can cook it right in my fam) 1.pick the collard greens or take off steam 2.add water(depends on how many collards u have ) 3.salt pork cut into cubs,hamhogs about 2,and a hog jaw (this is what makes it salty but u can add more) 4.put in Pot on low heat and cook for about 4-10 hours depend on the amount u make

Bro! Buy smoked hamhocks, not raw ones for the flavor profile. Or even use smoked shanks. Then try using a package of 'salty pork' normally around hamhocks or the bacon section. Could replace the collard greens with black-eyed-peas(dried, not canned!Soak over night in water so they burp!) def use the salty-pork instead of bacon for that, then you're winning as well. It will kick it up a nice notch, from what you did with the canned black-eyed-peas, I promise you!

Some are definitely smoked till the skin turned really dark, BUT as you can see when he cooked and chopped the meat it’s still PINK meaning at the very least it was CURED(with nitrate). Curing involves lots of salt, a few spices and preservatives. He wasn’t joking about the salt. Other meats that get this treatment: Salt-Pork. It’s not called “salty pork.” Ham Certain sausages Country ham(the original source of the hamhock) No one buys “raw” hamhock these days, the proper term for that would be FRESH. It’s always cured.
You can buy "uncured" hamhocks at multiple grocery stores here. Just like you can with ham, bacon, and hotdogs. Raw for food means fresh by definition..... You're right if the meat was pink after cooking, that it has been cured in some fashion. I'm not about to re-watch to check. But cured doesn't mean smoked. You're just that type that needlessly needs to be right, about even the most stupid thing. Still not a smoked hamhock.
My soul food is a nice grilled cheese (I use either cheddar or havarti sometimes both or if I’m really in the mood I’ll get some humboltd fog which is a Brie cheese bleu cheese hybrid and my personal favorite cheese) with some homemade tomato basil soup that combo puts your soul in heaven.
You did good but I wanna see some real soul food like chitterlings, pig feet, mac & cheese, baked beans fried chicken, turkey wings, fried pork chops, potato salad, pasta salad, deviled eggs & all that good stuff 😍 & it looks better in the tray 💪🏾.

I’m a southern girl and I tip for when you make Collard greens is if you have fried bacon in a pan or plan on doing it save the oil and lightly sauté the greens in for like 2 mins each hand fun it gives the flavor of the ham hocks with out all the salt and slap ya mama and Tony’s Creole seasoning are amazing in it love you❤️
Greens recipe looks pretty close to what we use for holidays with the exception of I’d add another 2 boxes of low sodium stock and the leeks are new (I use onions and garlic) and vinegar is added more towards the end. The ham hock DEFINITELY provides ALL of the salt you will need. For sure more liquid because you need some pot liquor for that cornbread. Nice job! Everything Looked yummy!

Real talk, when black folks (AA) say it’s not enough seasoning we really mean salt. It’s either our taste buds or we don’t get taught that salt is an accent seasoning. Either way between that and sugar, HBP is a problem. Thanks for making it clear that sodium is present in strong quantities in many of the dishes.

Ok Quang, this may be YOUR kind of soul food but it's NOT soul food! I guess I just should classify myself as a "southern cook." I'm from the deep south and I learned to cook from my mother who learned to cook from her mother with whatever ingredients they had, which wasn't much. They always managed to make it delicious though. My sister & I both learned the everyday common dishes by watching our mother.

I use Mrs. Dash Table blend and reduce the salt. Other seasonings are used besides salt- including Indian spices.

Quang keep doing what you do. I am form the south and I don't mind that you made your on version of soul food. Most southern cooking is not the healthiest. My only suggestion would me to steam or saute your greens bc you are getting rid of all the nutrients other than that I give you an A++

Real talk, when black folks (AA) say it’s not enough seasoning we really mean salt. It’s either our taste buds or we don’t get taught that salt is an accent seasoning. Either way between that and sugar, HBP is a problem.

Ok Quang, this may be YOUR kind of soul food but it's NOT soul food! I guess I just should classify myself as a "southern cook." I'm from the deep south and I learned to cook from my mother who learned to cook from her mother with whatever ingredients they had, which wasn't much. They always managed to make it delicious though. My sister & I both learned the everyday common dishes by watching our mother.

Recipe to feed the soul:
Ingredients-
- 1 empty bowl from cabinet
- 3 cups of favorite cereal
- 10 oz of almond milk (milk of your liking)
- 1 shiny spoon (or chopstix)
Directions -
Place bowl on counter top. Pour 3 cups of cereal in bowl. Shower cereal with your choice of milk. Grab spoon or chopstix and begin feeding your soul!
