It would be interesting if you made one extraction incrementing the tools step by step. I think all of them make a difference, but I would like to know which of them are really a must.
as a former barista, I am going to say its not a skill issue necessarily. Thing is, depending on some of these prosumer/ home machines (lower end compared to higher end), some do not smooth out mistakes in a shot like a commercial machine (and grinder) can. This where WDT and other tools help to smooth out these discrepancies and stem the tide between prosumer and commercial machines to get a uniform shot everytime. I have a Gaggia too, and doing regular shots straight up often come with mixed results...and depending on the grind, coffee and roast, it can get infuriating fast with this machine.
Well, I really appreciate you saying this! The Gaggia Classic Pro is certainly feisty and not as consistent with water temperature and pressure. It adds a level of complexity to being "consistent" with the shots...
