I ALWAYS freeze mine right off the vine. It is how my grandma and Oma(great-grandma) did it. They had dedicated freezers just for the tomatoes. So I never even knew how to skin them with out freezing them. Now I understand why my grandmas did the freezer. When you have 8 kids. You dont have time to process fresh tomatoes 10 times a summer. My husband calls my tomatoes in the freezer. Tomato rocks. I love the flavor of the frozen ones. It saves all the juice and flavor instantly. They are so good. I would love to walk through your garden and smell all the dirt and flowers and plants in the air. It is so pretty.
I love canning my tomatoes during the winter. It warms the house during processing. It does not change the flavor and it's so very easy with the tomatoes peeling themselves while thawing out. I then dry the skins to make tomato powder to mix with everything.
Ive been enjoying your weekly garden tours! I’ve taken away so much from them, but most importantly the fact that it’s okay and NORMAL for your garden to not look perfect all season long and that it’s totally normal to not have plants do so well. I’ve always been so hard on myself when my plants die and I tend to see all of the negative things happening in the garden. You are so positive and grateful for what your garden gives you and the way you talk about the beauty of your garden reminds me to be more grateful and appreciative of what I’ve managed to grow. Put your chickens in the garden too to clean it up and fertilize.. it worked awesome for us this year. Grew 2x as much as ever before. I freeze my tomatoes right out of the garden. when I need some for chilli in the fall, just run water over it in colander, skins slip right off, Core and dump in pot. Works great!

I use the freezer trick to quickly process tomatoes for tomato soup, which I freeze also in flat 1 gallon bags to enjoy with grilled cheese sandwiches over the winter. I make all my tomato soup for the winter at once with the “ugly” tomato’s that I have popped in the freezer as they have come ripe. This way I have zero wasted tomatoes. I really enjoy your videos. Thank you so much for sharing.
This time of year is both wonderful and sad. The harvests in my little garden are getting bigger every day, the garden is at its peak, but some things have just tipped over to the other side and you just know that very soon the summer garden will be winding down. All of those tomatoes look so yummy! My first round didn’t handle so well and the plants ended up dying so when I heard you mention a second summer harvest before the first frost I went ahead and started more sweetie cherry tomatoes. They sprouted and we’re so cute but then yesterday I wake up to find that the birds had eaten them! 😭 I cried a little. It reminded me of Matthew 6:26 and how God cares for the birds and us also even more. I’m happy to have helped our wonderful bird population because I enjoy watching them fly and sing, I just wish they would have pecked at the other plant starts I had...I guess they don’t like baby Kale too much. 😂 thank you for sharing your garden successes and losses with us.

We have had a premier1 solar powered electric fence for many years now. Wonderful product and company, they really helped us trying to figure out what we needed. It still zaps hard years later lol

I sure hope you have a wonderful trip and visit with your family. I just cleared, amended and replanted my beds yesterday and this morning already. I just did A LOT of greens, collards, kale, turnip (just for the greens). Also some early cabbages, beans and peas. I’m hoping to have a better fall than summer. I did get some very tasty tomatoes but not much production. It was just SO hot. My Amish paste were horrible. Total disappointment. I can’t believe you got one soooo big! That is AWESOME!!! I always freeze mine in the beginning when they just start or towards the end when I get burnt out. Then when things slow down or in the dead of winter when boredom strikes, I get to canning again :) best trick I ever learned
Your friend is right! I have done this for years. I also take fresh tomatoes from the garden, wash and then take them across my box greater. I put the tomato meat in ziplocs and toss in the freezer.

There is another way to easily skin your tomatoes. It’s called a "Victorio strainer". Victorio used to be the brand but now other companies are making them. They are so cool. You put the tomatoes into the funnel at the top. Then crank the handle. The tomato pulp goes down the chute into a bowl and the seeds & skin go out the end of the seive into a different bowl. This is done in minutes. No kidding. I’ll never do it by hand again. The strainers aren’t too expensive. Some are cheaper than your vegetable hod! You can also use the strainer for fruits like grapes & berries.
I would love to see you review all your various tomatoes and go over which one you will grow every year and those you will not grow again. Along with saying how they are best used!
Zavia Hope Thomas I was about to post the same comment. Especially the lesser known varieties. I grew a tomato one year that was supposed to resemble a peach. (I forget the name if it.) It was peach colored and slightly fuzzy too. However, it was small (saladette size) and the overall flavor (sweetish) was not to my liking. But you never know until you try or get a trusted review.
I bought some plants this year and had volunteers show up as well as seeds I planted directly. The amazing thing is the ones that were volunteers and direct sow, have as many flowers and many more tomatoes than the plants I bought that were a foot taller! I decided to only direct sow from now on. It is so much easier.

I had heard about freezing tomatoes and how easy it is to peel them afterwards. I did this and then used them in a soup and the flavor was one of the best. It's definitely a winner in my book because it's so easy and saves time when you have so much to do.
When we were kids, our Mom would go out with the salt shaker in her hand, pick a tomato and eat it right there in the garden. I am the only one in the family who does not like tomatoes, but I surely do love yo grow them! My husband and 3 Golden Retrievers love them! The pups swipe them green right off the plant, lay down in the shady grass at devour them. Needless to say, should have fenced them in much sooner.. One Patio variety went from 25 to 2 tomatoes in a few days.

I have not tried the tomato trick yet but my grandmother used to do it. I am planning on giving it a try after our first big tomato harvest next year. Several people have also mentioned it on blogs and videos so I am guessing that it does tend to work. It will be exciting to see how it works for you. Best of luck!

I got started late putting in the spring garden, planted seeds today for hopefully a small harvest before winter... Just hope we have a longer fall than we did for spring... The freezer trick works great! I’ve done it for years. Just don’t let them soak in very warm water or they’ll get waterlogged. Quick dip is all they need to peel perfectly.
Hi Jess, a little late posting to here, but, my best friend Faye freezes her tomatoes every year, then processes in the fall when she has the time. She said there is no difference in the taste. I froze mine this year, and they turned out awesome. Love, love your garden!
It is a challenging time in the garden, it is hot and dry and I have to accept what I didn’t get done this year, and figure out what to do with too many summer squash, and keep anxiously awaiting ripe tomatoes. Pacific Northwest gardening is not for impatient people! I have frozen the tomatoes straight from the vine with a good rinse, and I don’t even peel them later, if I am using in soup I just thaw them and run them through the blender. It is a life saver if you have lots of tomatoes at one time. Your garden is lovely.
Carole Just Carole if you're trying to figure out what to do with summer squash, you've probably heard them all. I gave a canning recipe for making pineapple zucchini. I've never tried it but was always intrigued.
Have you tried cutting up tomatoes into chunks, placing them on a greased baking sheet, putting a bit of oil, salt and fresh cracked pepper on them then roasting them in a 400f oven until caramelized? They can be put in a blender with chicken stock, red pepper flakes and roasted garlic to make a tomato soup. I store the roasted tomatoes in the freezer and then take them out whenever I want soup all winter.
Getting ready for Fall planting here also. I'm in Missouri so we plant about the same time. My beans didn't do well at all with all the heat. I am planning on doing some rattle snake beans. They do well in the south in the heat so thought I would give those a try. And I also just did cuttings off my tomatoes for fall. My black brandy wines got blight and spread to my Cherokee purple but I still got a pretty good crop. Cherokee is my favorite slicer. I will be saving some seeds from those but not from my garden. Lol. My grandson is growing them also he is 14. It's the only tomato he has there so saving from his. No cross. He planted where an old chicken coop had been before they bought this land. He has some huge tomatoes. He did nothing but water. And he didn't get blight. I used cow poop that had been milk barn clean out and had set with lime on it. And I fertilized. His still are better then mine. I may have to get chickens lol. Can't wait to see your fall garden. Hugs
Jess, I know how you feel about the end of season...I have used the freezer/water method for 3 years now and will never go back to skinning through boiling water method. You done even need to cover them with boiling water. I find hot water from tap works just fine. Blessing to you. Oh, wanted to thank you for you planning for fall planting video. I too freeze whole raw tomatoes when I don't have time to process, or don't have enough ripe ones to make a batch. I wash and core them (cut the stem end out, going down maybe 1/2" to 3/4") and put them in gallon Ziploc bags. When I want to use them, I let them partially thaw in the bag, then the skins slip right off -- no need to put in water. I think taking the stem out ahead of time makes this easier. Then I crush them by hand and put in sauces, soups, chili, etc. Works great! Thank you Jess for who you are and all you do. I so enjoy your videos.
I'm doing the same with my tomatoes this year. The cukes and beans kept me so busy canning that I figured I'd give the freezer idea a shot and then I can get to them when I have the chance. I'd love to know what some of your favorite sweet peppers or mildly hot are...I don't love the really hot ones like I used to. My mouth likes them but my gut, not so much. Well instead of Brandywine, I now plant the comparable heirloom Rose that is sweet and hugh. One you should try is my favorite, an orange one called Valencia.....It's sweet, medium size, it melts in your mouth.
I just did frozen tomatoes! It works a treat. If you don't have one, I heartily recommend a Victorio food mill. I will never make sauce without it again!

I think I tried to grow those same peach tomatoes, I got seedlings and when I put them in the ground they died!
Zavia Hope Thomas the local college does a spring plant sale that features MANY heirloom tomatoes, so I started with a plant, not seed.

The amazing thing is the ones that were volunteers and direct sow, have as many flowers and many more tomatoes than the plants I bought that were a foot taller! I decided to only direct sow from now on. It is so much easier.

I second that freezing whole tomatoes idea. Tried it before , not too bad for preserving ur fav tomatoes .

I had heard about freezing tomatoes and how easy it is to peel them afterwards. I did this and then used them in a soup and the flavor was one of the best. It's definitely a winner in my book because it's so easy and saves time when you have so much to do.

When we were kids, our Mom would go out with the salt shaker in her hand, pick a tomato and eat it right there in the garden.
I am the only one in the family who does not like tomatoes, but I surely do love yo grow them!
My husband and 3 Golden Retrievers love them!
The pups swipe them green right off the plant, lay down in the shady grass at devour them.
Needless to say, should have fenced them in much sooner..
One Patio variety went from 25 to 2 tomatoes in a few days.

You are the best motivation! My garden is the best this year since finding your channel. Now I can not wait to run out the and try to propagate some new plants. I'm In a zone 5 and doubt I'll see any fruit but it would be a fun experiment to know for next year :)

I have not tried the tomato trick yet but my grandmother used to do it. I am planning on giving it a try after our first big tomato harvest next year. Several people have also mentioned it on blogs and videos so I am guessing that it does tend to work. It will be exciting to see how it works for you. Best of luck!

I got started late putting in the spring garden, planted seeds today for hopefully a small harvest before winter... Just hope we have a longer fall than we did for spring... The freezer trick works great! I’ve done it for years. Just don’t let them soak in very warm water or they’ll get waterlogged. Quick dip is all they need to peel perfectly.

Hi Jess, a little late posting to here, but, my best friend Faye freezes her tomatoes every year, then processes in the fall when she has the time. She said there is no difference in the taste. I froze mine this year, and they turned out awesome. Love, love your garden!
It is a challenging time in the garden, it is hot and dry and I have to accept what I didn’t get done this year, and figure out what to do with too many summer squash, and keep anxiously awaiting ripe tomatoes. Pacific Northwest gardening is not for impatient people! I have frozen the tomatoes straight from the vine with a good rinse, and I don’t even peel them later, if I am using in soup I just thaw them and run them through the blender. It is a life saver if you have lots of tomatoes at one time. Your garden is lovely.
Carole Just Carole if you're trying to figure out what to do with summer squash, you've probably heard them all. I gave a canning recipe for making pineapple zucchini. I've never tried it but was always intrigued.

Have you tried cutting up tomatoes into chunks, placing them on a greased baking sheet, putting a bit of oil, salt and fresh cracked pepper on them then roasting them in a 400f oven until caramelized? They can be put in a blender with chicken stock, red pepper flakes and roasted garlic to make a tomato soup. I store the roasted tomatoes in the freezer and then take them out whenever I want soup all winter.

I have two gallon bags of tomatoes in the freezer now, waiting to process. Skins will slip off easily. I've done this for two years and it works.

I'll miss the summer garden but am looking forward to the fall garden!
Getting ready for Fall planting here also. I'm in Missouri so we plant about the same time. My beans didn't do well at all with all the heat. I am planning on doing some rattle snake beans. They do well in the south in the heat so thought I would give those a try. And I also just did cuttings off my tomatoes for fall. My black brandy wines got blight and spread to my Cherokee purple but I still got a pretty good crop. Cherokee is my favorite slicer. I will be saving some seeds from those but not from my garden. Lol. My grandson is growing them also he is 14. It's the only tomato he has there so saving from his. No cross.
He planted where an old chicken coop had been before they bought this land. He has some huge tomatoes. He did nothing but water. And he didn't get blight. I used cow poop that had been milk barn clean out and had set with lime on it. And I fertilized. His still are better then mine. I may have to get chickens lol. Can't wait to see your fall garden. Jess, I know how you feel about the end of season...I have used the freezer/water method for 3 years now and will never go back to skinning through boiling water method. You done even need to cover them with boiling water. I find hot water from tap works just fine. Blessing to you. Oh, wanted to thank you for you planning for fall planting video. I too freeze whole raw tomatoes when I don't have time to process, or don't have enough ripe ones to make a batch. I wash and core them (cut the stem end out, going down maybe 1/2" to 3/4") and put them in gallon Ziploc bags. When I want to use them, I let them partially thaw in the bag, then the skins slip right off -- no need to put in water. I think taking the stem out ahead of time makes this easier. Then I crush them by hand and put in sauces, soups, chili, etc. Works great! Thank you Jess for who you are and all you do. I so enjoy your videos.
I'm doing the same with my tomatoes this year. The cukes and beans kept me so busy canning that I figured I'd give the freezer idea a shot and then I can get to them when I have the chance. I'd love to know what some of your favorite sweet peppers or mildly hot are...I don't love the really hot ones like I used to. My mouth likes them but my gut, not so much. Hope y'all had a great time at the reunion!
The freezer method is amazing! I have done it many times when the produce gets overwhelming and I know I'll have more time later.

Well instead of Brandywine, I now plant the comparable heirloom Rose that is sweet and hugh. One you should try is my favorite, an orange one called Valencia.....It's sweet, medium size, it melts in your mouth.
I just did frozen tomatoes! It works a treat. If you don't have one, I heartily recommend a Victorio food mill. I will never make sauce without it again!
