sorry for the delayed response! maybe your switch is a little older and maybe some dust or dirt has affected the buttons from working. try cleaning it out, and if it doesnt work then you might want to find different controls that work properly.
are the controllers not working? or are they connected but nothing is happening? I dont know a whole lot about pc so i dont know what your exact problem is

Thank you for this what do you have your FPS set at by the way? It's something they added as a experiment for the switch.
What does fps do
Don’t put anything more than 60 since the switch can’t even play over 60

What about if i want to have to hold the crouch button instead of pressing it because i do not want to stay crouched whenever i release the button
i dont think there is an easy way to do that, but you should get used to it after practice. unless you want to change crouch to the R stick?
It won't let me click settings, It freeze And then stop Then kick me out of Minecraft i tried it once again but it didn't work still
Switches are not the most powerful devices, so if you have an older switch it might glitch a little. Hope your problem gets fixed soon!

But the point of Minecraft on the Switch is exactly that you're using buttons on a portablr device...
It sucks for me cause jt doesnt recognize the arrows on the joycon L before you say its an old switch its actually quite new
