Since then most stoves sold in the EU have such a physical barrier to ensure the pan does not cover the cartridge bay.

Yes when the stove is connected to the cartrige. Then turn it full to the right to ignite
do u see that peice of metal that is attached to the center of the the bottle place? the one u set up when the bottle was inside. what is this for?

Its butane gas. There is also an option for propane gas. But the first is much more common i guess
