You should consider buying a two basket "bayou classic fryer" it's a propane 5 gallon professional fryer. With the amount of fish you fry you'll save yourself a ton of money in wasted oil.

Would trade a boat load of catfish for crappie any day of the week. We used hush puppy mix for fritters, next stringer going to try your batter on fritters our puppy mix went with the virus.
