I too am shocked by the otherwise lack of chocolate+strawberry combo recipes. Strawberries are one of my favorite fruits to combo with chocolate, second only to raspberries
Looks to be about 3-4 bars chocolate (4oz each, so 12-16 oz total). Whipped ganache is usually made with a 1:2 chocolate (oz) to cream (oz) ratio, so 12-16 oz of chocolate is 24-32 oz of cream or 3-4 cups. 5-6 drops of strawberry essence 1/2-1 tbsp of vanilla essence A pinch of salt When you whip it be watchful, I’ve made chocolate butter before because I sat down and completely forgot about it. Besides the butter possibility, it’s pretty forgiving so don’t be afraid to add more chocolate or cream if you feel it needs it.

He just chucked strawberries straight into brownie batter and the brownies didn’t cook right because of the water content. I would prefer strawberry Nesquik to that shake or store bought cake mix since they do not have real strawberries in them bc strawberries makes me break out in a rash. How rude. But... everyone else in my family can eat them and I don't mind an approved recipe to make for them. Yes, summer is still here on the east coast and since my central AC is busted it has not been enjoyable outside or in the house. Bring on Fall weather please. The star puff pastry would have been cute for the 4th of July if you added a few blueberries to them?
Strawberries contain too much water. You have to reduce them down, use freeze-dried or storebought jam/puree if you want good texture and intense flavor.
For the cookies, you should just use your favorite chocolate chip recipe but instead add a mix of freeze dried strawberries (or frozen) with some chocolate chips. I normally make mine with raspberries and dark chocolate
There’s too much water in the fresh strawberries for that cookie recipe to work well. Maybe take a page from Claire Saffitz’s book and roast them first.
