mp is not a measure, focal length of lens matters to. With my 600mm lens on my photo camera (yes its 24MP full frame) i can shoot a license plate 1KM away :)
I think one KEY detail is with the size of the lens the test/video was done, they did it with 3.5-4mm. I got a 8MP camera with 2.8mm lens and the image captured is not better than the one of 1MP of the video.

For CCTV manufactorer like Dahua or Hikvision Keep same lens with Wider Senser so you Can see more Biger view. But not Better Digital Zooming So if you try 5mp and 8mp of the Same Model series you will not get better Image you will get wider view To get the benefit of Higher megapixel need to use it with Motorized lense

I had a camera shoot infrared light into my fully tinted (windshield too) truck and was able to see it like if the windows where down. It kinda scared me to know one can do that.

Sony still make a 12MP Sony A7S III camera, which is much much better than any 50/100MP phone camera Pixel size matters, especially for low light conditions
2mp is actually the best for night vision, so you either put up 2 cameras or buy really good 2mp cameras. 8mp at night is worthless, unless you light up the area like daytime.

Zoom is a tradeoff. The more you zoom, the smaller your field of view, which can make all the difference in surveillance camera.

What brand would you recommend? I've been hearing Hikvision are fantastic but obviously they don't tell you the flaws.

When the light is weak, the optical lens revolution will be low. the 8M has no big difference from the 2M, I want to see night vison too.

5/6/8MP Hik cams are rubbish at night. Best all round cams are the 3/4MP Low Light cams
2mp is actually the best for night vision, so you either put up 2 cameras or buy really good 2mp cameras.
