I spatchcocked my turkey for the 1st time ever, I'm now 48 years old, and it was simply the best turkey I've ever eaten... NO JOKE! Also worth noting... I had a 13.8 lb bird that took 3.25 hours before I hit temp. Plan accordingly, but it was so good, I'm doing another one next week!!

MAN! people went crazy this Thanksgiving. The turkey was falling apart and so juicy when I pulled it of the grill! It was the best turkey I've ever cooked!!!!! Thanks for the insight!
We did a test cook of this recipe tonight to make sure I had it right for next week...WOW!!! I have never had a turkey this juicy and flavorful before! Three grow people looked like a pack of Hyenas eating. To borrow from one of the great movies from the 80’s. Chef Tom, if someone asks if you’re a god, you say YES!
Made this for a Friendsgiving this year on my WSM.. I did bump up the temp to 325 and then popped it in the oven at 450 for the last 15 min or so in order to get a crispier skin. .Many there said it was the best Turkey they ever had...I of course had to agree. Thank you Chef for the video.

I have a fresh, small turkey on order from my butcher for next week. And I’ve just watched the prep for it right here. I will do mine on an 18.5” Weber Smokey Mountain (WSM). I just bought the WSM and love it.
This was bird #2 this year... What a combination of turkey's.... Along with the cranberry/sugar spice dip sauce we used some of the cranberry with a local favorite sweet BBQ... Both were huge hits! Great cranberry taste..

I did this exact same smoking method for a thanksgiving before you came out with this video, and it was the best turkey that I’ve ever made by far!! No other method has ever compared to this method. Cooking in the oven or deep frying have nothing compared to this method when it comes to flavor, texture, and the amount of cooking time for a full bird. (4 hours) when I cooked my larger turkey. It was the most juice, tender, and flavorful bird that I’ve ever made. I can’t put into words enough for how emasculate it turned out. Just amazing.

Last minute...they said fry one...then day before, let’s smoke a turkey. Ahhh Okay so I’m spatchcock a turkey come up with a brine on the fly...offset smoker with hickory, pecan & cherry 🍒 I’m excited! Thanks to this video it’s a go. Dude you rock.

Good one . I don’t go with the bbq sauce bc you already have the sauce presented in the pan. Dip some butter and citrus to it. Serves all ! Great additions thanks a lot nan
No one answered you so, I'd say go with the Pit Barrel Smoker. They cost about $300 but they're really a set it and forget it type of unit. Get the Turkey hanger accessory as well. You can hang 2, 12 lb birds in the barrel. You could do 1, 20lb bird but it'll take longer for it to get done, obviously.. hope this helps brother 🤘🏾
Oh man. I do smoked turkey breasts almost year round. This recipe is fantastic. The only other thing I would suggest would be to put the bird on a cooling rack and then in the pan. That would give the air room to circulate under the bird as well and keep the meat from swimming in the fat and juices that run out (though some may like that; I prefer getting everything slightly crisp and pouring the au jus later) Keep up the great work on these recipes and videos.
Great cook. After discovering spatchcocking several years ago, it's the only way to go. I like to start out slow to get some smoke and then cook a little hotter 350-375 to get my skin crisp. Since it's spactchcocked and everything cooks evenly, the birds never dry out on me and the skin gets crispy.
Thank you for this very educational video. I only have an Oklahoma Joe's Bronco smoker. Can I apply the same process if I cook it in my drum smoker or do I need to do something different? I don't think that a tray with fit in it!

Just made this. My smoker only goes up to 275 degrees, but it came out perfect. So it took a little bit longer, but it was the juiciest Thanksgiving turkey I have ever had or made myself.

Awesome video and recipe as per usual. Any advice on adjustments for larger turkeys? I just bought the package with the briner bucket, the brining liquid, seasoning etc. etc. Planning to do a 20-22lb bird for 10 adults. Pumped to try this out.
