You got to run to flywheel cover if that flywheel comes off it'll solve right to the bottom of the boat and don't forget the thickness of the gasket on the pump that just raised your pup up and ate a 16th
Good point on that thing becoming a big sawblade if the bolts stripped out on the crank. Also good call on the gasket adding a little height when it's mounted.

I’m in the hand throttle camp too. I don’t know why JT wants the foot pedal so bad. He had a jetboat for years but it was a low profile boat where your legs were sticking out like you are in a car. In that little jet boat it kinda makes sense since you could keep both hands on the wheel since it turned like a jetski. This boat is so big I don’t think we have to worry about holding on for dear life to the wheel. We’ll see.
you should cross promote with a auto / marine detailing channel. let them buff it out. you get a video and exposure to their audience, they get a video and exposure to your audience. everybody wins!
Clean and buff. It will still have a worn patina that will look badass

Pressure wash "JUNKYARD JET BOAT" in the side and buff the letters only. Put 3 seats in it and call it good.

Lightly sand then cut n buff. There are plenty of videos on restoring gel coat.

I say make it look restored on the outside. I vote for hand throttle. Letting off the throttle in a jet boat makes it not steer
