En Colombia se hace un postre llamado arroz con leche, es precisamente arroz con leche y dulce, y se decora con canela en polvo es muy rico, también le aplican uvas pasas
También en el Pacífico y la Costa Colombiana tenemos el dulce de Arroz precisamente para Carnavales y Abril los venden

En México también tenemos el arroz con leche y la horchata, agua de arroz con leche, canela y vainilla, muy rico 🙂🥳

They're making sorbetto (gelato is with milk, these have water), and we don't use rice in the ice cream
They look good and I'm sure they taste even better but they aren't very Italian

I think they put rice in only once and it's for that one specific flavor(Riso Bianco, no clue what that mean but anyway). Idk about the milk but, is it possible to make ice cream look that creamy without milk? Maybe they're using powered milk b/c I see every batch have some kinda fine powder when they pour the mixture. At least they are using milk here @ 9:01

I wonder how did they clean the machine before pouring other flavour
They don't, you plan your flavours accordingly and usually nuts last. You can just pour water into the machine and set to clean which will spin the beater but without freezing the drum and therefore the water. If you did this between every flavour you'd produce less per hour so they try not to.

Complimenti sembra proprio gelato artigianale, quello di riso però in Italia non lo trovi facilmente, direi una rarità. Devono lavorare un po' su come si riempie la cialda, nessuno in Italia fa quella ridicola piramide 😅
