If this show isn't considered heavily popular like the other major animes, then I'd consider this the best underrated anime of all time. I don't care. This show is staying in my top 5 permanently.
It might get bumped down for you a bit, because they REALLY rushed some of the chapters after the age of exploration arc. In chapter 200, they make a major breakthrough, and 28 chapters later senku achieves his goal.

This sufficiently answers a common question many students have when being taught: "When are we going to use this?" Most times when teachers try to answer this, they just give a short 10 second explanation and then move on. But here we see characters who need it, and why they are using it. Why each invention through history was made and how that invention evolved as the needs progressed. Take for example the gear. First we saw it as a need to get a consistent spinning force to produce cotton candy and cold threads. Then we saw it used in the water wheel as a combination of various types of gears to produce electricity, perform mechanical functions with ease, and help set up other tools. Here we see the gear used once again, as a use for an automated powered machine. Of course there's tons of extra stuff you have to consider with gears like measurements of teeth, the size of the gear itself, etc, but this is to show why the gear was needed.
I feel like the Lathe in and of itself should have gotten more focus. Those are very useful, easy to make with a low tech base, and if memory serves, my teacher said that a lathe can produce all the parts needed to make another lathe. And after a while they'll need to take a break from innovation... to focus on production.
considering that at this moment they are racing against the clock to defeat Tsukasa before Spring: when he is in a position to easily steamroll The Kingdom of Science and has taken Chrome hostage to try learning all that Senku had managed to accomplish, efficiency is more important for Senku than overall production.

They’re very popular as model boat engines as they are simple to produce and easy to control. The main difference from real life in the anime is that the steam is usually admitted and vented through ports on the side of the cylinder, rather than through the top

he does eventually use that Lathe to get to a Level 2 Lathe… then use that one to get to Level 3..
